    I think i would make up a potato bake type thing, slice the potaotes and par boil, then layer them in a dish with the fried onion (with garlic) and pepper slices, make up a white sauce and put a layer of sauce on top of each layer of potato and veg, and build up.

    Put a layer of white sauce over the top, then some grated cheese, then cook in the oven, you could add any herbs you wanted, but I am not keen on herbs, so would not know what to reccomend.

    I would stick them in a roasting tin with some whole garlic cloves, olive oil, salt black pepper maybe a sprinkle of oregano, fresh herbs and roast them. Eat hot or cold over the next few days. You can serve them with a blob of mayo, natural yogurt, feta or other cheese crumbled on top....

    I find it staggering that your OH has problems with vegetables after their sell by date/best before. The sell by date is for shop use not consumer use. Best before date is common sense:

    If the potatoes are not full of growths then they are fine. Until a pepper is wrinkly then it is fine (even then it can go in a sauce). The shallots will be good for a month after their sell by date.

    May I suggest you don't tell them?

    Anyhow. How about roasted peppers, shallots and garlic with herbs blended to make a pasta sauce. If you have any tomatoes then chuck them in also.
  • I would boil the potatoes, cube them, roast them, part way through put in the rest of the veg and then stir through whatever seasonings etc you fancy. and maybe a fried egg.

    in fact i might try this myself cos i have big sacks of potatoes sprouting in my cupboard *ashamed face*

    Don't know if I am too late - but you could turn it into a
    Ratatouille by simmering it all with a can of tomatoes and some herbs and garlic? Love Ratatouille!! Best wishes

    I buy my fruit and veg from my local farm shop, so have no dates on anything. Maybe you could remove the original wrapping when you bring stuff home and keep it in paper bags - that way your OH won't know what the dates are.

    I'm planning on making sweet potato and roasted red pepper soup this afternoon, to use up the sprouting onions and wrinkly red peppers currently sitting in my kitchen.

    Did the potato bake thingy in the end -was lovely! Plenty left for me to take to work for lunch tomorrow. Thanks again for all the recipe suggestions. I'll definitely try the rest another time.

    Its best before... they will not "go off overnight"

    Should still be fine for at least a couple weeks...

    Failing that I would make onion and pepper soup with potatos
