Storecuboard Challenge - New for June!

    Turkey Tetrazzini



    12 oz pasta, cooked & drained (I like spaghetti or twists)
    5 cups diced cooked turkey or chicken
    1 1/2 cups chicken or turkey stock

    1 1/2 cups milk

    6 Tbsp butter
    6 Tbsp flour
    Salt and pepper to taste
    4 oz cheese, grated

    Peas (optional)
    Mushrooms (optional)
    Seasoned bread crumbs


    Quantities are flexible!


    Melt butter in a large saucepan. Add flour and stir until well blended and cook a few minutes. Remove from heat and slowly stir in stock and milk, stirring until well blended and smooth. Cook over low heat until thickened. Add cheese and stir until melted. Season withsalt and pepper.


    Mix sauce with chicken, spaghetti and optional peas or mushrooms. Place in a casserole dish (or two) and sprinkle with bread crumbs. Bake at 350 degrees until hot and bubbly.

    I'm in! I've got a fairly full storecupboard at the moment, and while I don't think it'll be too hard to use the pasta, tuna etc, if anyone has any suggestions for polenta and green lentils, they'd be appreciated. I'm setting myself a £15 budget for the week, including the occasional lunch at work. I usually bring my own, but every now and then I forget. I'll try and get my fruit & veg from the market, that should save a few pennies!

    I am already £160 over my budget this month )-:
    Despite working seven days a week! So annoying! and I think alot of it was on silly food purchases and Starbucks - boo!

    I have hardly anything in my store cupbaord and very little access to a kitchen (live in a very overcrowded rented house with a teensy kitchen and no work-top space at all) and I cant eat gluten - so its going to be quite a challenge!

    Any more turkey ideas will be welcome - currently it is defrosted whole, and I am wonering if I'd get more meal-mileage out of it by cutting it up before cooking.....

    Just signing in to say I'm managing really well to stick to the challenge. Have bought fresh salad veg and fruit. Other than that been invited to a BBQ later and asked to bring along a dessert. So all I had to buy was a large tin of pears from Lidle (57p) and six eggs (two for recipe) and now have a lovely pear, almond and ground rice tart to take to BBQ. Freezer is starting to have some space in it which is great and I've really saved money by not nipping into the supermarket on the way home from work.

    Hope everyone else is doing well and enjoying the good weather to boot!

    Hello All

    Well, I've not saved very much - due to wine and a MacDonald's this week :o , but I've stayed within budget and not felt deprived - hopefully I'll do even better next week!

    Am just off to make sandwiches to freeze for lunch for next week, so that I don't end up in McD's again... :p

    Wsa all set to have a to the store cupboard challenge.

    Was doing really well. Went through my freezer, wrote up my meal plan and set of for tesco. Wandered down the wine isle - must have a little bit wine to go with my lovely store cupboard meals!!!! - When the offer of the year jumped out at me. Oh no I thought I don't think I can resist......
    Hold breath, pinch nose, try to look away, but it was to no avail I just had to have it, one of my favourite red wines was Half price.....HALF PRICE!!!!!!!!!!
    down from £6.99 (I never buy it at this price) to £3.49.

    Oh well I hang my head in shame.......I officially withdraw myself from this months challenge......Note I'm doing with a large glass of delicious Durius in my hand:cool:

    Don't give up! A bad day doesn't have to become a bad month - there's still all that lovely food in your kitchen just waiting to be used up.... and now you get to have a glass of wine with every money saving dinner!

    Aaagh! I've fallen into the wine trap too... taking this week's spend to £25.02!

    Maybe my budget is too low? Oh well, if I stick around the £25 mark that will still be a vast improvement on previous months' budgets. At least the wine is coming out of that, instead of being an extra cost - so the storecupboard challenge isn't entirely in vain.

    Off to find a corkscrew.... and think about what to do with my leftover turkey...

    Okay, over the past week or so I've cheated as I went to the Co-op to have a look and see what offers they had on :o I only went in to buy some apple-pies which were reduced to clear and ended up buying some meat :o:rolleyes:

    The meat has almost all been used up (even if I did end up going back and buying some buns for the burgers!) but it's been OH cooking for a couple of nights with one thing and another and he likes his meat and chicken :rolleyes::rotfl:

    Yesterday I went shopping and bought a new jar of tomato puree (old one is almost gone), 3x SP ravioli, a bag of SP frozen sausage and a bag of SP frozen mince from Asda, and then a pizza from Aldi.
    • We had the ravioli last night as DD wanted to make tea :D
    • the mince (including a small packet from the freezer and also some pureed veg soup that I found in the bottom of the freezer) will be made up into bolognese for tonight (might serve a small portion of it with a jacket spud or salad)
      • the left overs (I'm going to pad it out even more with rice) will be used to make a lasagne which should leave me enough
      • for a lunch on Thursday.
    • The pizza is for Friday night as I have a funeral that day and I won't have to worry about cooking, just heat the oven up and sling the pizza in from frozen ;)
    Sausage are always a good standby to have in this house. So although I've added to my storecupboard I'm still working my way through it (like the lasagne, rice and veg soup) but it is that small now (cupboard has 2 tins of chickpeas, 1 tin of beans, 1 tin of chopped tomatoes, flour, pasta, rice :eek: excluding herbs and condiments) that I'm at the stage where I need to occasionally buy ingrediants to make meals up:rolleyes::rotfl:
    Creeping back in for accountability after falling off the wagon in 2016.
    Need to get back to old style in modern ways, watching the pennies and getting stuff done!
