    Hello all

Well, further to my splurge on bargain fruit and veg on Friday night, I have had to re-jig my meal planner for next week to make sure it all gets used!

I have written up my plan and stuck it to the fridge door, with breakfast, lunch, dinner and 'extras' listed for each day. I am also trying to lose weight/eat healthily so I have dug out all of my tupperware tubs ready, so that I can measure up portions to freeze at the same time as serving, and so avoid going back for seconds!

So far, the only problem I have this week is in making sure I use up all my fresh stuff. I will need to pop out to the shops on Weds/Thursday to get fresh fruit and salad for the next couple of days, but otherwise have got everything, including lunches for work etc, all sorted out! Hopefully I'll end up with about 5 frozen portions of main meals to take me into next week too, so I shouldn't need to spend very much at all next week.... well that's the plan, anyway....:o

Anyway, must dash, my home-made spicy lentil and tomato soup should be nearly ready to come off the stove... :T

    Annie

PS Any ideas for using up spinach anyone, that's the one area I'm coming unstuck on.. or can I freeze it - it is fresh, bagged from the supermarket?

I reckon you can freeze fresh spinach-I've done it with fresh basil -in a plastic bag which then ,when it's frozen,it crumbles easily and can be chucked over pasta. So spinach should freeze in a similar way and used for sauces and stuff,I'd imagine .I'm off to do cupboard and freezer reccy now before shopping tomorrow:p

I like the sound of this. Being new to cooking and shopping. I have been wondering after cooking for myself for a month now, what can i attempt to make, surprising how much self satisfaction it has given me.
Gonna try making a Risotto this week I think, seems you can put anything in you want, its all personal preferences.

Im not sure I should post this in this Thread but it does relate to the Storecupboard. I was wondering.
What Items would you say have the most uses. in the way of tinned food or packets and also some freezer items. obviously the likes of chicken, mince etc can be used for zillions of Meals. unfortunately I have a small Freezer which seems full, maybe need to eat some of the bargain priced items to make some space.

This is to help me buy in some good and useful ingredients which will give me lots of variation. i dont want to go down the ready meal road which could be very tempting.
Maybe its worthwhile me writing down all the Food I have & posting a separate thread to what people would make with them. One Month I will try and plan a whole months worth of Meals when I am really good&combine it into my Food Budget.

Ive already joined the June Shopping Budget :)

Hey All. This is my first time joining in any of the challenges, so I think I'm just going to do as much storecupboard cookery as possible, to help me keep within budget for the grocery challenge.

My bro-in-law is in hospital at the moment and is super-bored, so I entertained him by showing him a list of everything in my storecupboard and challenging him to come up with recipes - ain't I a great sis?! :p

I have to say, he came up trumps and I had a lovely dinner of tomato sauce (slow cooked onion, tin toms, lots of black pepper) with a tin of anchovy fillets shredded into it, on spaghetti. It was really yummy and savoury.

I have also found a tin of posh pilchards in olive oil. He suggested whacking them on toast, but does anyone have any more substantial meal ideas?
  • count me in too!
off now to do an inventory of cupboard and freezer!

Why not open the tin and chuck them in a bowl and mash them with a sprinkle of paprika, then if you have a small plain pizza base spread the pilchard mix over the top, and top with grated cheese and sliced hard boiled egg/and or sliced tomatoes and chuck in the oven until it's all melted.sprinkle lots of black pepper over it and serve with home made potato wedges. When my children were small many years ago I found it helpful to mix lots of savoury things together, and always added either chilli powder or paprika for an extra zizz.
Their favourite was odds and sods pie which was a basic 'blind' baked pie case filled with left over sliced sausages , sliced tomatoes ,onion, eggs, baked beans, virtually anything that I could reasonably throw in. It was cooked in the oven and looked like a very odd sort of quiche but they always ate it either hot with mash or cold with salad .It used up all the left-overs very nicely and cost only pennies. I looked after my pennies even thirty years

Thanx JackieO, the pizza idea sounds delicious! In fact, the thought of it is seriously impacting on my "holding out for lunch" ability...
  • Hi annie-c,

Could you please post the receipe (or link) for your chickpea and chorizo stew?

    Thanks!
