    Just thought I'd report in, to say I made meals the whole weekend from storecupboard, fridge and freezer - delicious. Did nip out on Saturday and picked up reduced fresh peas, carrots and avocados - I think that's allowed cos it's fresh and healthy.

    Hello

    Well in true Storecupboard Challenge style, I looked on the internet and found two recipes and then combined them to make the most of what I had in stock; and then I reduced the quantities of meat and oil in order to make it more healthy - here is the 'annie-c authorised version':

    Serves 4 (with crusty bread as a side dish)
    • 1 can chickpeas (or 6oz dried chickpeas, soaked overnight)
    • 100g chorizo (recipe recomended 200g, but it has a strong flavour and is very fatty so I cut myself down)
    • 1 tablespoon olive oil (recipe recommended 1/4 cup! 1-cal spray oil would probably be fine, but I decided to be frivolous...)
    • 1 large red onion
    • 4 cloves garlic
    • 1/2 red chilli (optional, to add a kick)
    • 1 red pepper (not in original recipes at all, but I had one spare and thought the colour/flavour to be in keeping with the general theme)
    • 2 x cans chopped tomatoes
    • 2 tsp paprika
    • 1/2 tsp dried rosemary (better to use 1 sprig fresh but I didn't have any)
    • 300g fresh spinach (optional - but if you use it, recipe said 500g, but I didn't have that much, and using 300g seemed quite a lot!)
    • Salt & black pepper

    Crush garlic, chop chilli finely, slice red onion thinly, and slice red pepper - saute gently in olive oil for 5-7 mins until soft. Slice chorizo into 1/4 inch slices and add to pan for 1 min. Add in drained chickpeas, tomatoes, paprika and rosemary and simmer gently for 10 mins. Finally add 1/2 spinach and cook gently until wilted. Repeat with second batch spinach. Add salt and black pepper to taste

    Serve with crusty bread.

    Options:
    • Add in a packet of pork sausages (cut into chunks) along with chorizo for a more 'meaty' stew.
    • Leave out the spinach for a more 'red' stew

    The stew can be kept in the fridge for up to 3 days after cooking and tastes better/stronger by the second day.

    Personally I would not add spinach again if I was planning to make it last more than one day - or at least, I would add it to each portion just before serving, on the day it is going to be eaten. It adds a lovely colour to the stew but goes gloopy by day 2!

    I used up the rest of my Potatoes, made Wedgers with them & had last Mince Pie in the Freezer and half a Tin of Beans. yum.

    I want to buy some Rice to make a Risotto with, but that would mean going the shop as Id also need a Stock Cube, would use the Bacon my Parents gave me from the Market :)

    Last night DD and I made chicken pie from a packet of shortcrust pastry from the freezer, cooked chicken from the Bank holiday weekend (frozen), and gravy from the cupboard. I served it with stuffing also from the cupboard, a bag of frozen mixed veg (it had a split in it so I cooked all of it and put the leftovers in the fridge) and some mash (SP potatoes from Asda). All in all it was a very filling meal although the amount of dishes produced is not so good :rolleyes::rotfl:
    Creeping back in for accountability after falling off the wagon in 2016.
    Need to get back to old style in modern ways, watching the pennies and getting stuff done!

    frittata on monday with peppers and potatoes leftover from sunday added bacon lardons that had been in freezer for ages;tues-steak from freezer with aspkt pepper sauce and HM wedges and frozen broccoli that was being ignored! Wed will be some frozen gnocchi HM tom sauce and some mozzarella I froze ages ago for me and DD,had to buy lamb chops for unadventurous OH.Still managed to spend£73 on weekly shop!?!:eek:

    was doing really well with this challenge until I found myself in Kwik Save where they have loads of BOGOF offers on there own range stuff (not sure if this is nationwide or just that the store I was in has been taken over - perhaps they're just trying to sell off the Kwik Save branded goods). Any how I came out with a bagful of store cupboard stuff for under a fiver! Back on track now..................

    The other night I ate a really lovely storecupboard meal made from :
    • Borlotti beans
    • Peas
    • Tinned tomats
    • Tomatoe ketchup
    • Soya sauce
    • Soya mince
    • Onion

    I made twice as much as I needed and froze the rest for a later date :D . I also had it with a bit of quinoa but I cooked the right amount of that as I'm not to sure if that can be frozen and would rather not risk it. It might not be to everyones taste but I thought it was delish :cool: .
    Tonight I need to use up the rest of the borlotti beans so will probably make a meal out of; borlotti beans, carrots onion, soya mince, soya sauce , tomatoe ketchup and onion and garlic sauce. WIll be making double so I can freeze half for later. I will have this with rice, quinoa or pasta (spaghetti or fusilli). I think this will be a nice meal for tonight :) .
    I am a vegan woman. My OH is a lovely omni guy :D

    Thought I'd have a go at this, the kids and I are going to do our own mini storecupboard challenge for the next two weeks.....the OH has just set off for a week's fishing and then he's out of the country for work, so that makes it easier for me.....babysteps.

    We've got loads of pulses etc in cupboard and two whole ducks in the freezer, we should be okay for the next fortnight. Even stop myself from buying basmati rice in the supermarket yesterday....only went in for nappies and milk and I remembered there's brown rice(yuk) in cupboard.....well done me for resisting!!!!

    Better go and check out what we can have tonight.

    I have just defrosted a turkey and am trying to think of different ways to use it up. I'm nnot too keen on roasting the whole thing - and wondered if anyone had any tips or recipes for using up defrosted/raw and/or roast turkey to make meals to eat/freeze.
