    Here's my nachos method (I hesistate calling it a "recipe" cos it's not that sophisticated!)
    Turn grill on - high
    Arrange tortilla chips in a shallow ovenproof bowl/plate
    Spoon on salsa from a jar (supermarket own brand is good, to be found near the doritos/pringles. Get mild flavour if you have a guest who doesn't like it too hot)
    Cover with grated cheese - any good melting cheese will do, cheddar mozzarella etc. Buy the hard block of mozzarella as it's easier to grate than the soft "balls".
    Stick under grill til cheese melts.
    Top with dollops of sour cream & guacomole.
    That's it!

    Traditional piri-piri is very hot, you might have to scale it down for your non-spicy friend.

    Many thanks for the recipe. I have printed it out and will use it in the near future. I'm thinking of roasting a medium chicken with this sauce already on, so I assume that I would be ok to coat the chicken first?

    Maybe I'm just cheese-greedy, but I find that microwaving them long enough to get the cheese to melt properly can sometimes make the tortilla chips go soggy.

    I had it for tea last week..................yum. It's so delicious :drool:

    hello all again!!
    in our effort to become debt free we have decided that rather than trying to go out all the time with our friends (we have diff circles of friends so more expensive than if same friends too!) we will stay in but invite a couple or two over at a time for a meal / dinner party.
    what im after here is your dinner party menus...starter,main and desert....but with a difference i'd like two menu's from you all please.
    the first being your poshest pull all the stops out menu and the second a budget menu....because obviously sometimes we'll be ok moneywise but othertimes struggling and after cheaper options.

    Poshish (can't be bothered to check through recipes at this stage):

    - Homemade tomato and courgette soup
    - Salmon fillets smeared with pesto and wrapped in prosciutto, with mini roasties and asparagus
    - Syllabub

    Budget:

    - Greek salad (tomato, cucumber, olives, feta) or salade tricolore (tomato, mozzarella and avocado)
    - Big communal bowl of spaghetti and another big bowl of bolognese sauce, garlic bread
    - Homemade apple pie and custard

    You might try doing a themed evening for extra fun. I've done medieval and Tudor evenings with authentic recipes; everyone had to dress up, bring a song or poem etc. I've done Lebanese, Japanese, Mexican, Thai, Russian, African ...

    sashimi or oysters ( depending on time of year )
    thai chicken and chili soup
    noisettes of lamb in black currant sauce and seasonal vegetables
    panna cotta with fresh raspberries and raspberry sauce

    budget:
    salad of oven roasted vegetables with salsa on green leaves ( serve with warm crusty bread )
    garlic stuffed chicken with mashed potatoes with caremelized onions and fried spinach
