My family love my "dinner party chicken" - it is an adaption of a Slimming world recipe.
Get chicken breasts and make two slices almost all the way through them then spread with pesto, light cheese triangles,mustard or peppers (anything you fancy) - then wrap chicken breasts in bacon and place them in loaf tin , covered with foil and bake at 180 for about one hour.
If you want to really save money use chicken thighs and take the bone out then spread ingredients on them and roll up with bacon covering them.:):):)"This site is addictive!"

elona - I make all sorts of versions along these lines and Love them all!

garlic soft cheese
stuffing mix
haggis (serve with a whiskey sauce)
all are really nice. I use ready frozen chicken breasts for tesco's. 5 breasts in a pack and usualy the packs are on bogof. that makes each chicken breast about 50p. just defrost then follow elona's instructions. yummy and good value too.r.mac, you are so wise and wonderful, that post was lovely and so insightful!0 -
Hi all
I have a couple coming over for dinner tonight.
I need something that doenst have me slaving over a hot stove ( having a few temperature probs today) , and is fairly easy but impressive.
Im sick to death of curry, chilli, bangers & mash, burgers etc.
I dont like mince either, and I cant cook fish, try as I might .
Needs to be cheap too. We have 25 for the week between me & OH, so I really dont want to spend much on this at all

My daughters love what I call "dinner party chicken"
Get a chicken breast each ( or chicken thigh and debone and skin it) cut slit in it and spread it with a liitle dijon mustard, cream cheese, herbs - whatever you fancy. Wrap this in a rasher of bacon each and cook in a dish covered in foil for about 45 mins. Serve with salad or potatoes dauphinoisse etc.
Starter could be soup and to finish - thin home made pancakes with icecream and choc sauce inside or fruit etc."This site is addictive!"

Potato bake. Really is cheap as chips if you'll excuse the pun, easy & filling so you don't need lots to go with it. Slice spuds to about 1 cm each, arrange nicely in dish interleaved with sliced onion/bacon/courgettes/whatever esle you like. Cover over thin white sauce & top with tons of grated cheese. Bake under foil for about 30 mins then remove foil for last 15 mins. Serve with fresh veg/salad & crusty bread. Also nice with grilled tomatoes. Follow with fruit salad piled onto a scoop of ice cream in meringue (sp?) nests:D

I think Ill do profiterioles for pud, they always go down quite nicely, and they are not too much hassle! And Ive got all but the chocolate in for those too!

A good one is a pasta bake with one of those ready made sauces (the Asda Spicy tomato and pepperoni one is good.) You Just put uncooked pasta in an oven proof dish, pour the jar of sauce over and then fill the jar up with water and pour the water over too. It's really quite tasty. You could serve it with a simple salad and some garlic bread - and plenty of red wine!!!
BTW - you could easily make a basic tomato sauce yourself to use for the bake but if you don't fancy cooking the jar is good and only cost about 80p.0 -
How about quick cassoulet. Get a variety of tinned beans (red kidney, barlotti, canelleni etc) empty them into an oven proof dish with a tin of tomatoes, some stock, diced onion, carrot and celery and plenty of herbs such as sage, rosemary, thyme, parsley. Then add some meat. put in a hot oven for about an hour. I like using thick tasty sausages which I cook ontop of the cassoulet and then at the end I chop them through it before serving.
