I did a nice curry at the weekend - onions, mushrooms, chicken, tin of prunes, tin of chickpeas, tinned toms, milk, spices.
Howabout something Mexicanish? Cook up a batch of spicy mince, and get people to make up their own fajitas with wraps, salsa, sour cream, guacamole, grated Cheddar, salad.0 -

Lamb steaks in red wine & redcurrant jelly? Easy peasy & tasty
Fry sliced red onion (& mushroom if wanted) in a pan until soft. Remove & add lamb steaks - fry for 5 mins (?) each side until golden then put onion back in pan. Add glassful ish of red wine & 2-3 generous spoonfuls of redcurrant jelly & simmer for 5 mins. Add some gravy (1/2 glass ish, or spinkle of gravy granules, or oxo cube), simmer for further 5 mins or so until sauce reduced thickened. Done!
Serve with mash, or jacket pots, or new pots, or rice.....etc
Otherwise do something very similar but use onion/diced apple, then substitute pork for lamb, and cider instead of red wine. Then stir in some cream & warm through before serving.

Hi
Try this - i've made it for loads of dinner parties as it's really easy and you can make it in advance then stick it in the oven half an hour before you need it. It always gets loads of compliments! try the chocolate souffles on the same site for pud - they are divine!

Haloumi with leeks
I love this dish, it's great as a starter, or as a main course with rice and a nice crusty bread. I'd say this is enough to do as a starter for 4 or main for 2 (just double quantities for a main course for 4):
1 packet Haloumi (Cypriot cheese, available in most supermarkets)
8-10 baby leeks or 3 'normal' leeks
1 lime
1 heaped teaspoon cumin seeds.
Slice the Haloumi and fry over a medium/high heat for about a minute or so on each side (should go a nice charred brown colour). Set aside.
Slice and fry the leeks for a few minutes until softened a little, add the cumin seeds and squeeze over the juice of 1 lime.
Add the Haloumi to the leeks in the frying pan to warm through.
Serve hot.
I'm drooling just thinking of this!
Other cheeses will work - I just can't think off the top of my head which ones are suitable for frying.some people grin and bear it, others smile and do it0
