Salmon has some "perceived poshness" but is actually very cheap. Also very versatile. Nice griddled (if it's got skin, comes apart a bit otherwise) as an alternative to your steak and chicken.
Also nice cooked in foil with a variety of flavourings (ginger and soy, lemon and herb etc).
Salmon in pastry (en croute if you're posh) is great too. Your veggie alternative could be veggie en croute so everybody looks like they're getting the same if that sometimes seems like a nice touch.
By the way, I think the platter idea is brilliant.My eyes! The goggles do nothing!0 -
Is it no seafood because of allergies, dislikes or because someone eats kosher? Just in case of the latter, my ideas don't mix meat and dairy.
First course: bread, veges and dips: hummus, peanut dip and home made chicken liver pate
Second course: roast lamb with anchovies and rosemary, scalloped potatoes, tomato tarte tatin (will be good for the veges), roast vegetables
Third course: blackberry and apple crumble, thick cream OR apple pie and wensleydale cheese

Hi there-just typed this twice..it keeps vanishing :mad:
Made it at last....mum has been in hospital - and guess who had the recipes....got them this morning - so here goes
MUSTARD PORK ON CRUSHED POTATOES -4 - WW POINTS 5 1/2
Heat 2tbs sunflower oil in a frying pan,
add 4 x150g pork steaks - seal and cook until coloured,
add 150ml cider - or i use apple juice -great for using up those apples;) , 1 pork stock cube and 1tbs wholegrain mustard
cook until dissolved, then reduce heat and cook for 30 mins - turning occasionally - the sauce will reduce and go sticky....
Serve on :-
Heat 15g marge/butter in a large pan,
cook 1lb new potatoes, break down with the back of a fork and add to the butter, add seasoning
cook until heated through - i like to let them get crispy bits and they are nice if you add onions too

LUXURY CAULIFLOWER CHEESE - 4 .....WW POINTS 3
225 g leeks cut into chunks- or use onions in chunks - tastier and cheaper
175g carrots - cut into chunks
450g cauliflower -broken into florets
100g frozen peas
300ml skimmed milk
200g low fat cream cheese - own brand is fine, and the flavoured ones make a nice change
25g cornflour
25g low fat cheddar - or ordinary if not WW
15g fresh breadcrumbs
2tsp olive oil
seasoning
steam/cook the cauli, carrots and leeks/onions until tender
add the peas for the last 5 mins (or nuke in the micro)
place vegetables into an ovenproof dish
place the milk and cream cheese in a pan and warm - stirring to dissolve
mix the cornflour with a little cold water and pour into milk/cheese mix - stirring constantly until thickened - season and pour over veg
mix cheddar, crumbs, and oil in a bowl and then sprinkle over sauce..
place under a hot grill for 2-3 mins
or i prefer to place it in a medium hot oven for 10-15 mins

...so just the starter to sort....
The simplest & most impressive starter I've done recently is goats chese & apple salad.
It's lettuce, thinly sliced apple (granny smith's are nicest - sprinkle with lemon juice to stop them going brown), chopped walnuts and warm goats cheese with a vinaigrette dressing. Takes seconds to assemble, can be done in advance & tastes delicious. I do the goats cheese on a slice of baguette and stick it under the grill til it bubbles.0 -
