Not been on for a couple of weeks. Trying to use stuff up as much as poss, but keep failing and having to buy stuff. Anyway this week I'm trying harder.:money:
This is to feed me (don't eat red meat - oh & I'm trying to lose weight) and OH and DD (them).
Fri - Burgers in baps, salad & chips for them; buffet lunch for me at a conference so just a bowl of leftover minestrone from Thurs night and tuna salad.
Sat - lunch - cott cheese salad 4 me; cheese and tomato sarnies 4 them
eve - sea bass (from freezer - reduced of course!) baked on aromatic veg with jkt potato, tiny bit of leftover eves pud & yog (from soup night on Thurs)
Sun - lunch - carrot and jerusalem artichoke (first lot from garden) soup 4 me; muffins (from freezer - reduced of course!) toasted with cheese on top 4 them.
duck, leeks and kale from garden, jkt pots; stewed plums from glut in freezer & yog
Mon - veggie cottage pie (made with a bit of veggie mince from freezer plus lentils), carrots, kale
Tues - turkey (a few bits left from a stir fry pack in freezer) and cannelini bean cass (with odd bits left in fridge like mushrooms, carrots) cooked in slow cooker
Wed - hm fish cakes (using up a few bits of leftover fish from freezer - you guessed!), kale, leeks
Thurs -usually soup and pud night with whatever's to hand (loads of plums and apples in freezer)
Lunches I take fruit and yogurt, but I have 3 days training with lunch included so will have to watch myself calorie wise! 4 them it will be duck/salad sarnies on mon, corned beef sarnies (found a tin in cupboard) and bits and pieces (aren't they lucky!):DWeight loss - here we go again - watch this space!

I gave birth to my baby on the first of this month:T, so i'm mostly using up my stock from freezer, especially as hubby is back at work tomorrow.

leftover chicken from sunday dinner with a jacket potato and salad
Tuesday
pouched eggs and bacon on toast...yum
Wednesday
Having visitors to see baby so something simple and quick like soup or beans on toast
Thursday
Mushroom Lasange with garlic bread and salad if it is still fresh.
Friday
at mother in laws for lunch so for dinner depending what she makes either a sandwich or a giant bucket of kfc:rotfl:{not kidding last time she invited us for dinner we got only fruit salad}
Saturday
french bread style HM pizza with tuna and sweetcorn
Sunday
braised beef with onions and carrots with lots of mash.0 -

Monday: Cottage pie from left over Mince from the freezer probably with peas
Tuesday: Pizza and Jacket Potatoes (night shift)
Wednsday: Sloppy Joes - found this recipe on Duggarfamily.com and it is so easy and economical
Thursday: Sausage and mash with beans
Friday: Vietnamese river cobler (very similar to smoked haddock but half the price) and mash, with peas.
Saturday: Jacket Potatoes with chicken wings
Sunday: Roast chicken breast with Potatoes and Veg
I have found a couple of recipes on Duggarfamily.com economical and tasty.

I've just discovered this thread and I love it!! I've been planning my meals every week since I moved in my house in July to help keep the costs down and also help with the weight management! Next week's plan:
Sunday - Stuffed Mushrooms and salad (trying to be good as the OH is talking about bringing pizza home after work!)
Monday - OH cooking for me at his house (he's just learning, it will be something from Jamie's Ministry of food)
Tuesday - Tea at Mum's (roast pork and over cooked veg!!!)
Wednesday - Spaghetti puttanesca and salad
Thursday - HM Squash Strudel and salad and maybe a jacked spud if I have enough cals left.
Friday - HM fish Pie, mushy peas and veg.
Saturday - salmon with dill and chives, new pots and salad or veg
Breakfasts are a banana and a yogurt with either a HM banana muffin or cereal. Lunches are salad and eithe a pitta or some HM soup.Weight loss - here we go again - watch this space!

how exactly does one make Cobbler?
I've been thinking about more variation for beef dishes, but only really make spag bol, which becomes lasagne, and stew or chilli.
I have copied and pasted my recipe for you as I had it saved on my PC. It's a bit long, sorry:
Savoury Mince Beef Cobbler
(or you can use chunks of beef/steak)
Ingredients
· 400-500g beef - you can use meat or mince (although you can use lamb or any other meat really!)
· 1 large onion
· 2-3 large carrots
· Handful of frozen peas
· 2 beef stock cubes
· 6oz self raising flour
· 2oz margarine
· A pinch of salt Water to mix.
For the Mince:- Finely chop, or grate the carrots and onions
- Heat up a spoon of oil in a frying pan and cook the mince for about 10 minutes, stirring it regularly until it's all brown.
- Drain off most of the fat from the meat
- Add the onions to the mince in the pan. Continue to fry for another 5 minutes or so on a medium heat until the onions are cooked, stirring regularly.
- Once the meat has cooked, pour the meat and onions into an ovenproof dish that has a lid. The larger the better, giving you the largest surface area (to fit more cobblers onto!)
- Add in the carrots and peas.
- Make up your stock cube with boiling water and add this into the mince mix. You'll want quite a thick gravy.
- Stir all the ingredients together
- Place the casserole lid onto the dish and place it in a pre-heated oven (190˚C, 375˚F, Gas Mark 5)
1. Rub the flour, margarine, and salt together, to the consistency of breadcrumbs. (Cheat: You can use a food processor to do this)
2. Mix water slowly into the mix until you have a firm scone-like dough. If you add too much it'll become sticky (add a bit more flour), until you've added enough it won't be binding together.
3. When the dough's in one firm ball/lump, place your cobbler dough onto a floured worktop to roll it out so it is about 1cm thick and cut it into circles. If you have a scone cutter, great, otherwise find something else to use as a cutter that gives you 2-5cm circles.
4. Remove the mince mix from the oven, give it a stir and place your cobblers on top of the mince. They will expand outwards as they cook, so leave some space between them. The gravy needs to be quite thick so the cobblers don't sink, so if your gravy's a bit thin then add in another stock cube or some gravy granules, or a stir in some flour or cornflour to thicken it (I like to mix flour/cornflour up with a spot of cold water first to make sure there are no lumps).
5. Return the casserole to the oven, without the lid (so the cobblers brown).
6. Cook at 190˚C, 375˚F, Gas Mark 5 for 12-18 minutes, until the cobblers have risen and are a lovely golden brown.
Alternatives
Once the Savoury Mince Cobbler is cooked, sprinkle cheese on top of the cobblers and return to the oven for a further 5-6 minutes until the cheese has melted and browned.
Add in other vegetables you like: celery, sweetcorn, diced potatoes, a tin of tomatoes or real tomatoes.
Add some mixed herbs to the cobbler mix so you have herby cobblers, which look really lovely.

Thurs Chicken, mashed pots, carrots, cabbage and gravy
Fri Quiche and baked beans
Sat Pork steak, roast veg (got lots of odds and ends of veg left over)
Sun Pork steak, roasties,stuffing, gravy and veg (bought a big pack of pork steaks and forgot to seperate before freezing)
This is the aim this week but may alter depending on how I feel and if anything needs using up. Lunches will be leftovers, sanwiches etc and breakfast will be cereal or toast
Anyway I had better get on

Wednesday - Sausage Casserole or Sausages, Roast Pots, Veg and Gravy
Thursday - Sicilian Chicken with Pasta and Garlic Bread
Friday - HM Pizza
Saturday - Cold meat, New Potatoes, Salad, Coleslaw, Crusty Rolls etc
