Thanks Boodle I've copied it into my recipe folder. I'm not vegetarian but use a few meatless meals each week to cut the cost down & to fill up the hungry boys ;) I'll give the cake a whirl tomorrow as I've got all of the ingredients in unusually!

I found that I am more inclined to a vegan diet and my DH prefers to eat what I eat, with the odd bit of organic meat or dairy here and there i.e. although he enjoys the soya yoghurts, he still has 2ltrs organic dairy milk a week for his cereal and hot drinks, organic cheese which tends to last a good couple of weeks, and will have a meat dish if out (which is rare!), etc. We still have stuff to use up in the freezer which he and DD are having now and again, hence the fish. Baby and I are doing happily well as vegan so far, especially since I discovered the carrot cake ;) DD doesn't seem to have noticed anything different in the last week or so... mainly because there isn't much different, I guess :rotfl:

Another not-well person here! I was off work Mon-Wed with a bad cold/flu (who knows!), went in to do a one hour class yesterday, but not at all sure I'll get through 5 hours of lectures today. I suspect the students will send me home ten minutes into the first one when I start coughing.

Sat: toad in the hole, cabbage (using veg sausages for DD), cake of some kind for when we get back from the fireworks
Sun: slow roasted pork belly with veges of some kind (nutloaf for DD)
Mon: sausage and bean casserole using up the rest of the pack of sausages with bread (bean casserole without sausages for DD)
Tues: left over pork reheated in gravy with mash and veg (nutloaf for DD)
Wed: boeuf en daube with veg of some kind, cooked by OH (macaroni cheese from freezer for DD)
    Thurs: cauliflower cheese quiche, salad
Fri: individual pies (chicken for us, veg for DD) using some pie fillings I froze last week, sweetcorn & peas from freezer

I have a lot of bananas past their best, so I’ll use them in a carrot cake, and in a fruity flapjack. I’m also trying a cappuccino cake.

    Tu-Cauiflower and brocolli macaroni cheese
We-Roasted spaghetti squash with sausages and tomato sauce
    Th-Spaghetti with ragu de lepre

hotcookie, sticking to the plan isn't essential. If I look back at last week, there were lots of changes, usually because a meal produced leftovers I wasn't expecting and I used them in another meal. On Wednesday, for instance, OH cooked duck a l'orange (it's his day off work and he enjoys doing a special meal). There was some duck left so we had an unscheduled duck & noodles for tea last night, padded out with a rice pudding. As the noodles & sauce had been a freebie, it was an almost free meal. I'm fairly sure that what I've written down will change - there's bound to be a lot of the beef casserole, for instance, but the goal is to avoid waste and that's why I do an initial plan.

  • Oh I know that I don't need to stick rigidly to the plan (and never do!) but would like for us to try for once to stick to it, iykwim?
But we quite often change our minds on what we want! Amjust determined to use the darned spaghetti squash this week! We have 2 of them so hope to get through one. Not sure if it can be used in soup if we don't really like the roasted spaghetti type version....

Our neighbour is ill and doesnt have any family, so we are cooking abit extra for him, so that we know he is eating okay.

Bless you PP - that's a really thoughtful thing to do :A

Haven't posted a meal plan before as my "food" week tends to run from Weds to Weds but this week has been a bit different with the house move etc so here it is in all its glory

    Fri - Out! (A good start! :p)
Sat - Something warming as going to fireworks so probably chilli & JP's
Sun - Roast chicken with all trimmings
Mon - Bubble & squeak with cold chicken and fried eggs
Tues - Sausage & Mash with cauliflower cheese
Weds - Cod in Chorizo & Tomato sauce, JP's and fresh baby spinach
Thurs - Macaroni cheese & garlic bread
Fri - Egg, chips & beans

Lunches generally consist of either the night before's leftovers or sandwiches/wraps of some sort. DH doesn't eat breakfast (I know I know!) and I take my fruit & fibre to work with me everyday!

Have got some lovely ideas from these threads over the past couple of months - thanks to all :T

    xx

Hi there, I'm back with a proper plan this week. As follows:

Friday - chilli sausages with couscous and creamed chard
Saturday - out for dinner (I hope)
Sunday - roast chicken, roast spuds, roast veg and/or peas & carrots
Monday - fish Florentine with tomato macaroni
Tuesday - chicken fricassee from leftover roast chicken, rice, peas & lentils
Wednesday - crustless crab quiche with salad
Thursday - American style cottage pie
Friday - pumpkin & sage risotto
Saturday - beef goulash, potatoes and stir-fried kale
Sunday - green cabbage lasagne (with blue cheese and peanuts)

    Have a good week!

Hi all, back after hols and trying to get 'back in the swing'! As always, our menu's run from Sunday so I know if I've got any 'rubber' main dish to work with for the rest of the week, and veg is usually whatever needs to be used up first/next.

SUN- Roast Chicken / HM Mashed Potatoes (no frozen or instant in this house! lol) / Veg

MON- Chicken / Chips / HM Coleslaw

TUE- Baked Breaded Haddock / HM Coleslaw / HM Roll

WED- HM Oxtail Stew/Casserole / Veg / HM Roll

THU- HM Tuna-Pasta Bake / Veg

FRI- Leftover HM Oxtail Stew-Casserole / Veg / HM Roll

SAT- Either All Day Breakfast or a Takeaway

Still working on clearing out the freezer a bit, so the only real purchase in the menu will be the chicken and possibly some mushrooms if we go for the All Day Breakfast on Sat. :D and the veg.
