My friend cooked me a lovely curried vegetable casserole the other night which i am trying to replicate right now. :D The main difference is that she made it in a slow cooker and i haven't got one, so just doing it on the hob on a low heat.

Basically, you bung 1 can chick peas, 1 can sweetcorn and 1 can kidney beans in the slow cooker. Add selection of veg, cut quite chunkily. I am using sweet potato, green peppers, butternut squash, carrot, onion, mushrooms, parsnips (today was veg shopping day so i had quite a selection!)

Cook in the slow cooker along with the following spices: tumeric, curry powder, chilli powder, garam masala, for one hour (not sure of the quantity of spices, I've used between 1-2 tsps of each, will adjust to taste later in cooking).

After an hour add 2 tins chopped tomatoes and 1/2 a can of water. Continue cooking till veg is soft and yummy.

Makes a very nice spicy veg casserole. Very wholesome, would be good served with a big chunk of bread and butter rather than rice I think. And as it is so healthy you can have guilt-free second helpings. :T

  • Agh my post just got eaten!

What I was asking was how do I make chicken casserole? Recipes on the internet seem too fancy for me!

I have a casserole veg casserole pack from Tesco, chicken which I shall be getting tomorrow and a chicken casserole packet mix.

Do I put the veg in the pan, simmer for a while then add cooked chicken and make the sauce? Do I need to use flour, i've seen this in some recipes?

    Thank you! :)

I would probaly follow the recipe on the pack! but if if states to use raw chick then add the chick just before the sauce - as long as its heated right though then it will be ok
I do left chicken cass. by...
cooking veg -onion etc fryed the rest boiled
once at high heat - add cooked chicken cut into bite sized bits
Heat 20 min to 1/2 hr or until I think bits are warmed/heated completely
    thats it!

yours ..I would put frozen? veg in casserole with cold chick & sauce packet made up with cold water & slam in oven (or slow cooker) around 3pm to serve at 6ish - but I'm lazy with casseroles lol too be honest 1&1/2hrs should be more than enough
    HTH :)

Possibly because the default search is set to only look back for one month.

  • What does cook chicken in frying pan until 'sealed' mean?

Also I have a dish for the oven but it doesn't have a lid, should I put some foil over the top instead?

    Thanks!

I've answered you in the quick questions thread.

You only need to ask in one place, honest :)

I only like chicken breast and am wondering if anyone has a good old fashioned recipe for chicken casserole - don't want to use packet mixes or anything.

    Thanks.

    Hi TomsMom,

There are some recipes and suggestions on this thread that may help so I've added your post to it to keep all the ideas together.
