How do i make a traditional chicken casserole?

Hi there

I have a pack of 4 chicken thighs that I would love to turn into a chicken casserole in my slow cooker :D

Now, in the past I have always bought packet mixes to do a casserole - I've searched the indexed collection and couldn't find anything.......

What do I need to chuck in with my thighs to make a delicious chicken casserole? Any ideas - thanks!

    I'd add a tin of tomatoes, half an onion & anything else that was looking wilted in the fridge.

    you could try a couple of methods what ever suits really -

    either brown the meat then pop into the SC with veg and stock/tinned tomatoes or just throw it all in (which is less work). I personally prefer to brown the meat - but its just personal chioce and totally up to you.

    I would try tinned tomatoes with veg (you can use frozen) first of all as that is very easya dn gives you a good base to experiment from later.

    Throwing in a tin of condensed (e.g. Campbells) chicken or chicken and mushroom soup makes a really easy casserole. You can always add extras such as sweetcorn or a handful of peas too if you want.

    I would put the chicken in my slow cooker, cover with about 3/4 pt of chicken stock (or gravy, i normally make extra when i make a roast for casseroles and stews!!!) then add veggies of your choice. I use carrots, sweet potato and swede. I also add some sweetcorn about an hour before serving, as my children love sweetcorn!!!! You could also add a splash of wine, to add to the flavour.

    I know there are many threads of recipes but I really don't have time to look throuhg them all. I am after an easy and simple recipe to make a chicken casserole in the slow cooker. Can anyone help please?

  • we are going to have a pretty tight week this week coming.. so not going to be eating a lot of hearty meals like shep pie etc
    just thought that i woudl make atleast two meals though so H doesnt feel deprived!!!

    thought i might make a hearty casserole, but never made one before

    anyone got any nice recipes for a nice casserole..

    and what would you eat with it .. mash ??

    One of my quick, easy and tasty casseroles is Chicken in Noodle Soup!

    Serves 4
    8 chicken thighs (skin removed)
    4 carrots peeled and sliced
    1 onion peeled and chopped
    2 sticks celery sliced
    1 packet chicken noodle soup


    Brown chicken thighs and add to a casserole dish with all the veggies, soup and 1 pint water (packet will say 1.5 pints but this will just make the sauce a bit thicker). Cook at Gas #5 for about 1 hour or until chicken cooked and veggies soft. I serve with boiled potatoes that we mash into the carrots and juice - mmmmmmm
