Scones..how can i get them to rise..

    16oz SR flour
    8fl oz double cream
    8 fl oz lemonade (dont use diet)

    mix the cream and the leomonade in a jug then add it to the flour until a dough is formed. roll out cut into scones ( i made 15)

    cook gas mark 4/ 180*C for about 10/15 mins

    i think it aussielass and squiddly diddly originally posted the recipie

    they aren't a really sweet scone but lovely with jam in

    Thanks mrs.moneypenny I was just lurking round here and saw this recipe, MIL loves scones so I will defo give them a try.
    Any idea what the electric equivalent of gas 180*is:confused:

    hi
    gas mark 4 is about electric 180 , but i've always baked my scones at 220 so that they rise.....cook 'em at 220 for about 5 or 6 mins, then turn oven down to about 180/200 for 5mins xx

    Title says it all really - whenever I make scones they turn out lightg and fluffy but don't seem to rise very much. Are they supposed to or am I just supposed to roll the dough thicker?

    Hi Nikkisun,

    With scones it's best to handle the mix as little as possible. It may be that you aren't rolling out the dough thickly enough. The scones need to be about 2 -2 1/2 inches deep before going into the oven to make them light and fluffy. When cutting them make sure that you don't twist the cutter, but just rest it on top of the mix and push down with the palm of your hand.

    Thanks - the recipe said to roll out 1-2cm so obviously too thin!
