Scones..how can i get them to rise..

    thanks for the recipe tootles would like to give it a try is there an easy way to measure out the 1/4oz dried milk?

    Sorry it should have been 1/2 oz, I have weight scales, 4 new pennies weigh about half an ounce, I have not tried it but a tablespoon might weigh enough!! You could try weighing an ounce and taking half of it away, then see if that fits in something you have.......the breadmaker if you have one, the plastic spoon may take sufficient to weigh 1/2 ozs.

    I find the dry milk makes a lighter scone than using fresh milk, I suppose you could try using half milk and half water, you will need a scant 1/4pint, do not pour it all in, put a little in amd mix with a knife, then add a little more until yoiu have a softish dough. Different flours will absorb different amounts of fluid. Put a small amount of flour on the worktop and tip the dough out, knead and roll out.

    I knead by bringing the dough into a rough ball and then turning the dough bring the sides into the middle until the bottom is smooth,, then turn over and roll out. try not to be heavy handed or the dough will be tough.

    Hi Fluffynit,

    Glad to hear your scones are rising now. I had the same problem and went through a variety of recipes.

    My problem seemed to be that my oven wasn't hot enough, after a long process of many experiments! Once I'd got it to 220C my scones were fine. Just thought I'd mention it as no one else seemed to stress how important a really hot oven is for making scones. I also found a difference between the top shelf and the scones on the second shelf.

    Also used to get lop sided scones, but then found out I didn't quite have even pressure on my rolling pin, hence the uneven rise in the oven!

    Always use the cheat of not rolling them out to thinly, that way they look great when they do rise.

    Still have succeeded now, happy baking and lots more scones.

    My granny made bread and scones until she was 94 and she always used buttermilk and baking soda and cream of tarar. They were the nicest scones ever.

    Just made scones as boys have packed lunches tomorrow and they are a disater! they have hardly risen at all and look horrible, havent made scones in years! used a be-ro recipe off their website for rich scones, omited the raisins as i didnt have any, what have i done wrong?

    Tips anyone?

    Do the boys know that they are a disaster? Did you tell them? What do they taste like?
    I used to try to make sponge cakes. they always turned out really flat and crispy. used to tell my boys that they were Victoria biscuits!!:D

    Stupid question, but are you sure you used SR flour?

    I very carefully made my FIL a birthday cake................ then had to make it again when I realised that I'd used plain flour :o
