Just thought I'd let you know that I spotted an Ebay seller today who is selling Tiger Topping. I haven't bought any yet, but it might be worth a go!
I can't post a link as I'm a new user, but try bunging Tiger Bread topping into Ebay UK.
It's quite cheap, so I'm going to give it a whirl.
I also found a site which said their tiger topping is made with beer, which would fit with the barley malt extract that others have mentioned, as that's a byproduct of brewing:
Light Rye flour 450g
Beer ('Roaring Meg') 600g
Yeast 15g dried
Salt 15g
(You might need to scale the quantities down a bit)

Don't think I want to eat tiger bread from the shop again now that I've read the ingredients (it was a rare event before, but now ...)
Homemade efforts at least contain things that you can a) pronounce and b) aren't frightened of!

I can confirm the ingredient list for the Tiger bread topping.
Our instore bakeries use a paste consisting of:
Vegetable Oil , vegetable fat, flour treatment agent ( ascorbic acid ), L-CYSTEINE, hydrochloride, stabeliser, Disodium, Disthosphate, Barley malt extract.:jMoney saving eco friendly Fertility reflexology specialist :j0 -
I had to make tiger paste at college whilst doing a baking qualification. The 5 ingredients that have been listed so many times over is the correct answer. Oil, water, yeast, rice flour (semolina) and salt. Sugar is optional. It is the yeast that gives the topping its flavour, therefore try using fresh yeast if you are using dried and add more if you want a stronger flavour. What type of oil doesn't really matter, vegetable or sesame.
Why you're all so desperate to make it I do not understand. As someone has already said, it is so painful for the bakers to use if it comes into contact with skin, and blinding if it gets into your eyes.
The bread can look different in the supermarket as bakers often make mistakes, too much water in the dough hence flat bread. Forgetting to put the paste on before proving the dough. Even seen some guys put the paste on half way through baking when the Manager demands tiger loaves instantly.
To my bakery, it is the devils loaf.

Hi, i was wanting to make the bread in tescos over here we call it tiger rolls its crusty bread but the top of it is an orangey colour and all cracked looking.......does anyone know what the orangey stuff is please and if so when do i put it on the bread is it before i cook it or during or after thanks for reading i will popon later tonight to see if anyone can help as i off out now thank-you x:)C.R.A.P.R.O.L.L.Z #7 member N.I splinter-group co-ordinater

It's to do with rice flour and yeast being spread over the top if I remember correctly. The yeast stretches but the rice flour doesn't. I'll see if I can find the info...

It's a special mix that bakers use which includes Rice Flour.
Try this:
Crackle top bread25g/1oz rice flour
1 tsp caster sugar
¼ tsp fast-action dried yeast
pinch salt
1 tsp sesame oilFor the topping, mix the rice flour in a small bowl with the sugar, yeast and salt. Stir in the oil and 25ml/1fl oz of warm water until it forms a thickish paste. Cover and set aside in a warm area until ready to use.Just before putting the dough in the oven use your hands to rub the topping paste all over the top and sides of the bread in a nice even layer.
Bake the bread in the oven for 25 minutes. The bread should be crackled on top; if not, pop it back in the oven until it starts to darken. If it is crackled, give it a tap underneath - it should sound hollow, if not put it back in the oven for another five minutes or so.Everything has its beauty but not everyone sees it.0
