How about mash done as Colcannon (mashed potato, cabbage & onion), you can find various recipes on line, served with what ever your budget runs to, sausages, pork chops, lamb chops, steak etc.
Everything has its beauty but not everyone sees it.0 -

Mmmmm that sounds delish Meadows - I've often had chilli with mash but I've not made chilli with oxtail soup before. May have to give that a go.

I used to live with a vegetarian and i used to make a homemade version of the much missed pizza express 'king edward' which was CRUSHED potatoes (not quite mashed) layered with mozarella, basil and tomato pizza sauce (any tasty tom sauce would do) and rosemary, bung it in the oven topped with more cheese so it goes brown and lush and its delicious and cheap!0

Here is one that is maybe a little different - a speciality from Belgium called 'chicons'
Make your mashed potato and mix in a tbsp (or more depending on quantity of mash) of grainy mustard.
Boil or steam some chicory (at least one per person) for about 12 minutes unti just tender.
Cut each chicory in half lengthwise.
You will need sliced cheese and sliced ham. Put a slice of ham on top of a slice of cheese, and roll a half-chicory in it. The cheese is on the outside. Repeat for each half-chicory.
Put your mustardy mash on the bottom of an ovenproof dish. Arrange the ham-and-cheese chicory on top, seam down. Place in oven until golden and bubbly.
You can even make it in advance and put the assembled dish in the oven when you need it.
And it's cheap, too! We love this in winter. Although kittie's black pudding comes very close......."Remember that many of the things you have now you could once only dream of" - Epicurus0 -
creamy mashed tatoes with a soft fried egg on top is lovely,especialy served with a gammon steak.
You could also try experementing with the mashed potato by adding,cheese or garlic or even a small portion of sour cream dip,I love mash.
Hhhmm im now wondering if some philadelphia cream cheese would be nice swirled through mash?

Mince cooked with fried onion, finey diced carrots and baked beans and a dash of Worcestershire sauce and a bit of Bisto mixed in. Cook for about half an hour, season and serve over some nice, buttery mash.
