Saturday – stayed at my sisters, we had chicken thighs in honey and smoked paprika with baked rice

Sunday – stuffed pepper with chicken and couscous

Monday – possibly babysitting in the evening, so no idea. If I’m not, I’ll either have a jacket potato or an omelette

Tuesday - beef bourguignon with potatoes (probably mash)

    Wednesday – leftover beef bourguignon

Thursday – chicken stir fry with noodles

Friday - pasta in a tomato sauce with bacon

Saturday - http://uktv.co.uk/food/recipe/aid/556352 - but going to use bacon and Boursin cheese instead

Sunday – scrambled egg on toast or something similar (need to use eggs)

Might make a quiche for lunch during the week. I was due to finish my job on Friday, but they’ve extended it until the end of the year which is good :D

I stuck to my first meal plan last week! All except stuffed peppers as I ate at my parents unexpectedly one night. I'd already made it, so ended up freezing it.

This week is a short week for me as I'm away at the weekend, so should be easy, but I need to use up the contents of my fridge and I'm also broke as anything so determined not to buy any food or raid my freezer stocks. Roasted a duck yesterday, so have some of that to start me off.

All breakfasts will be either cereal/toast, and snacks of hummus and crudit!s.

    Monday
    L. Moroccan aubergine and chickpea salad
    D. Duck fried rice mixed with carrots, pumpkin and spring onions, accompanied with cucumber & hoisin pancake wraps

    Tuesday
    L. Duck, spring onion, cucumber and hoisin pancake wraps & miso soup (from sachet)
    D. Bubble and squeak made with bacon, courgettes, pumpkin (making 4 portions, 1 for Tuesday, 1 for later in the week, and will freeze the remaining 2)

    Wednesday
    L. Duck fried rice & miso soup (from sachet)
    D. At parents

    Thursday
    L. Leftovers from previous night
    D. Bubble and squeak with couscous salad (added with any veg left over from the week).

    Friday.
    L. Couscous salad
    D. Away until Monday morning! And for the rest of the weekend, so no more cooking or plans.

    Debt-free and Proud!
Well this is week two of meal planning for me and so far its working a treat :) We stuck to everything we had planned last week which saved us so much money as normally we would leave everything to the last minute and then either eat out or grab a take away.

So this week we are having -

    Breakfast - Fruit toast
Lunch - Piri piri chicken salad or tuna mayo sandwiches.

    Dinners -
    Roast chicken with veggies
Lamb curry (homemade last week, currently in the freezer)
    Homemade Pizza
    Spicy pasta
    Chicken risotto
    Chilli with rice
One meal out somewhere that accepts entertainment vouchers!
