Loads of roast veg left - what to do?

Roasted a load of veg (carrots, butternut squash, parsnips, shallots etc.) for tea last night, but did enough for 4, forgetting temporarily that DH DS and DD have gone camping for the weekend, so now I have loads left that I don't want to waste. What's the best way to reheat them? If I microwave them will they be soggy? Or should I fry them to crunch them back up again? Or mash them?

They'd make a lovely soup. If you want to reheat them, I would put them back in the oven but I think they will be soggier and maybe better mashed?Official DFW Nerd No 096 - Proud to have dealt with my debt!0

use them to make a roast veg lasagne (add some tinned toms if you want) or roast veg toad in the hole0

or you could fry them in a little oilvie oil and serve them on the side of a dish. or stir fry. or get a couple of tortia bread and some cheese and sandwich the veg and cheese in bread and fry for 2 mins on each side....If i upset you don't stress, never forget that god aint finished with me yet.0

you can freeze them for a few weeks and then reuse them, they'll also be fine in the fridge for a couple of days.
How I use my left overs from the freezer:-
fantastic pizza topping (yup I bung em on a hm base from frozen:rotfl: )
with passatta & olives for a yummy cheap sauce for pasta
mixed through couscous with a little olive oil, and balsamic vinegar and basil
mixed into the eggy part of a hm quiche (again from frozen -it defrosts as it cooks)
on little pastry bases as tartlets for ds
blended into home made coscous
blended with a little boiling water & cooked lentils for soup ( i do this then freeze)
add a handful to any homemade meat pie fillings for extra flavour and goodness.
I love roasted veg and get my veg cheap from the market so often "batch" roast it at the weekend and then use it up over the week in various guises.0 -

I like to do a cheese souffle and add in the veg too - makes a real meal of it served with HM chips - lovely stuff.Saving in my terramundi pot £2, £1 and 50p just for me! :j0

I've decided on roast veg pasta bake instead of lasagne because:
a. Ive found a jar of out-of-date cheese sauce in the cupboard.
b. I've got no lasagne sheets, just dried pasta.
c. There's a half used tin of chopped toms lurking in the fridge.
d. The parmesan cheese I've got needs to be used asap.
