Loads of roast veg left - what to do?

    Bubble and squeak, it has to be done! Best use of left-over sprouts too (in fact best use of sprouts full stop :rotfl:!)

  • I cooked roast potatoes and parsnips and have some left over. Would they survive being reheated? I haven't tried before because in the past I've judged the number of veg right.

    Could I reheat in the microwave or would they need doing in the oven?

    Yes, they will be fine.

    I have a couple of old ice cream tubs in the freezer,any leftovers (spuds,parsnips,sausages ect) go into that so I can make an easy mael out of whatever I have in there,just defrost & bung in the microwave for a few minutes...

    Was thinking of trying this new Jamie O rec which uses up some leftover roast veg and some turkey as well

    When he did it on the tv he also said you can bung in leftover gravy etc, so sort of a use up soup.

    In that case leave the spuds out, mash them up instead and use to top the dish, stick it in the oven for a quick Christmas pie.

  • Seen this on the Good Food website - Leftover veg and Orange cake.

    I can't vouch for if its any good, but it does look nice & would do lunchboxes.
  • just boil up some spuds, cool, add leftovers and do some bubbble - yummy either with lots of grated cheese on top or a lovely big fried egg.
