Chopped up in cous cous is delish. Add some raw red onion finely sliced and some lemon juice and some pumpkin/sunflower seeds if you're being really fancy.0

How about using an egg and a splash of milk to make a frittata. cut into wedges it is great in a lunch box.0

Any ideas of what I can do with left over roasted carrots and parsnips? How well do they reheat? What if I freeze them? Could I make them into something else? Any lunchbox ideas would be brilliant!
Do you have a microwave where you eat your lunch
I add toasted nuts and a few chick peas to mine, nuke them for a minute or so, and eat

I cooked roast potatoes and parsnips and have some left over. Would they survive being reheated? I haven't tried before because in the past I've judged the number of veg right.
Could I reheat in the microwave or would they need doing in the oven?0 -

I've been known to bamg them in a Curry sauce before (usually a Rogan Josh or Jalfrezi). It's known in our house as Left Over Curry and it's lovely
