How about a posh Bubble & Squeak? Spuds and cabbage are the usual, but any root vegetable will do, and the shallots will give it a lovely tang.

How about making roast veg tortillas?..easy..just pile some of the roast veg into the middle of a warm tortilla then wrap! yum yum im hungry now too!!!!love my little man he is amazing :j0

I usually make roast veg the day before I eat it and microwave it with no problems.
Made loads today to have for tomorrows dinner. Have to make loads as its the only veg I can get my hubby to eat!0 -

I made roast veg pasta bake - heated the roast veg with a tin of toms, boiled some pasta and mixed it all together. Unfortunately the out of date jar of Lloyd Grossman chese sauce had decided to 'go off' so at the last minute I made a microwave cheese sauce and topped the pasta bake with it. 20 minutes in the oven and to my surprise it was absolutely delicious. Being a confirmed meat eater I'm a bit wary of veggie food being tasteless, but as I say it was fab. Hubby came in from rained-off camping trip just as veg bake was cool, and ate what was left! The great outdoors had obviously given him an appetite.0

Any ideas of what I can do with left over roasted carrots and parsnips? How well do they reheat? What if I freeze them? Could I make them into something else? Any lunchbox ideas would be brilliant!0

Add some veggy/chicken stock and wizz in a liquidiser, homemade roast veg soup or freeze and reheat.0
