Why can't I peel my eggs?

    We roll them, peel a bit of shell off and then stick a teaspoon in and you can scoop the shell off. hope that makes sense, not sure if I explained it very well!

    Sorry for beginners questions.

    I often seem to get a 'stockpile' of eggs which could easily be pickled.

    I keep chickens and as a consequence have loads of eggs when previously we ate maybe one a week. Pickling might be the answer for when we get bored of pancakes with custard.

    I've recently rediscovered hard boiled eggs and was quite annoyed when my freshly laid eggs seemed cemented to their shells...I now only use older eggs to avoid frustration.

    I was wondering about how to pickle eggs myself - OH loves them!

    Just been a-googling and came up with this website: http://www.accidentalsmallholder.net/articles/recipes/pickledeggs/

    would be interesting to see if other OSer's use a similar method :grin:.

    Well, I've learned something here - didn't know that about older eggs peeling better.

    And I've had a good laugh reading some of the posts.

    My own method for peeling eggs is........ Assign the task to Mr LW.:rotfl::rotfl::rotfl:

    havent read the pickling link but heres my method
    boil eggs for ten minutes then immediately run cold water over them and leave them to cool in cold water - you can do this while sterilising the jars. i use cold water steriliser method - yes thats right - the one for baby bottles or you can buy the tablets where they sell homebrew stuff. I use the big bucket meant for doing beer!
    right once jars are sterile and eggs are cool - take jars out of steriliser and lay them on pads of kitchen roll upside down to drain. they should be fairly dry inside.
    now peel the ruddy eggs.
    pack them into the jars most jars have a sort of shoulder? pack them up to there! now fill with white pickling vinegar - you can buy sarsons but my local greengrocer sells it in gallon jugs which is much cheaper and works just fine!
    make sure all the eggs are submerged. i then place a layer of clingfilm over and either replace jar lids or seal with rubber bands.
    Hide them for six weeks and they are ready to eat. some sites say they are ready after three weeks - probably are but i do mine about the middle of november ready for christmas - so they get about six weeks!

    Is it the cold water that makes the difference? I do not even recognise this problem, it doesn't happen for me. But I always give a RIGHT GOOD old rinse under the cold water tap until the egg itself is almost cold. According to my mum this stops the 'greying' of the yolk. But maybe it does more than that.

    I have Egg Rage and Onion Rage! :o

    I hate it when the onion skin is superglued and comes off in tiny pieces! I end up ripping off the next layer of 'good' onion and flinging it.
