    When cooking Thai curries, there is no need to have anything pre cooked.

    I guess you are not making the red paste from raw ingredients so I'll start from the paste. Wok on medium heat, can use pan, no oil. In with some coconut milk. If your volumes call for a whole can then it makes no real difference if you just put it all in now or only use 1/3rd. Mix and bring heat up to medium high.

    Slice the chicken breast (if using chicken) very thinly on the diagonal to give you thin sashimi sized pieces. You don't want huge chunks. Throw that into the wok / pan. When using vegetables, you can cut them into small chunks.

    Leave on medium heat to simmer until ingredients cooked. Real Thai pastes (not Asda like ones) will probably require you to add water now but supermarket ones do not.

    If too hot, add more coconut milk and perhaps some water but be careful. Too weak, add chillies. Season with Thai fish sauce.

    dusts off card............:rotfl: Excellent recommendation - thankyou -always looking for different sources of more authentic pastes etc. I usually make my own but it's good to try different ones and at those prices they are very cheap. :T

    edit: ooh, £30 minimum order :( Oh well, I'll stick to making my own, but thankyou anyway :D
