Thanks. Whilst I was waiting for replies I had a quick look on a few websites. Have found a recipe which asks for 2.5g of dried or 25g of fresh so will hold fire until I find out a bit more. Glad I had the lightbulb moment before I had started! Many thanks for your quick reply!0

that recipe you found could have been for a different kind of dried, there is dried and fast acting dried. It's what is inside your head that matters in life - not what's outside your windowEvery worthwhile accomplishment, big or little, has its stages of drudgery and triumph; a beginning, a struggle and a victory. - Ghandi0

remember you will have to "activate" the fresh yeast first, just add some lukewarm water + teaspoon of sugar to it.
Give it a stir to dissolve, keep in warm place, and it will soon start to froth up, maybe 30 minutes or soEight out of ten owners who expressed a preference said their cats preferred other peoples gardens0 -
OMG! I never knew there was a difference! I have no idea what I use or what the recipe asks for!!

Ahh! Now its all making sense why some recipes have sugar and others not. Thanks Farway! Have decided to hold off and make tomorrow. And I thought I was being clever getting the fresh yeast! Might of been easier just to use dried!0

Yay! Everything asks for dried active yeast and that's what I use... wonder why some recipes ask for it to be mixed with sugar?!?!?!?!We spend money we don't have, on things that we don't need, to impress people we don't like. I always use fresh yeast to make my own bread. I use 25g for a loaf of white or whole meal bread. Just use warm water to activate it first and it should be fine.0

Tulip, would you be able to post the weights / amounts that you use? I am getting very confused! Many thanks.0

Yes the amounts are
500g flour
300ml warm water
25g fresh yeast or 1 1/2 Ts of dried. I have a measuring spoon for this.
1ts salt
I find using these quantities gives me a good loaf.
I also add a 3/4 of a Tbs of oil to the mix as I find this gives me a much better loaf.
I just use my bread maker for mixing the dough only and cook the loaves in the oven I prefer this to the ones baked in the bread maker and find it no hassle at all.
Hope this helps keep trying as the results are so much better than shop bought bread Imo
