You have to be strong in this instance and tell your solicitor- always everything through them that is what they get paid for- that you are not happy with this situation and if it cannot be resolved then you will consider pulling out (if that is what you would do).
This stinks and needs sorting in an ethical manner. If the kitchen is staying fo a while then I would be firm, however if it is something you will change soon then I would just reduce the price by say £20,000!!!(that will get their solicitor sweating and rightly so!!)and tell then because of what they are doing you will need to fit a whole new kitchen!
A nice kitchen is not cheap these days! Another point is this:
When you viewed the property, did they show you their lovely kitchen sink and the nice units all in place as part of their sales tactics? If so then regardless of what people think, this is an underhand way of trying to sell a property.
Sorry if I sound a little aggressive with my comments however I have been involved in property for many years and have never (nor would I) treat a potential purchaser in this manner.

If I really loved the property I'd get myself down to B&Q and buy a new sink. Sometimes you just have to let somethings go (says me the most rightious person you'll ever meet!) but if there is anything else.... I'd be threatening to pull out but like a few people have said, threaten to drop your offer by 20K etc.
At the end of the day it depends how much you love the property, is it worth loosing it?
You could even suggest that they get their a*rses down to B&Q and replace the sink. I think I'd be inclined to put into writing that you are dismayed the vendors intend to remove a fixture/ fitting that usually remains intact, that you are concerned that the kitchen will be not in a practically usable state for the first few days and that there are cost implications. I would state that you are taking the next couple of days to consider your options and ask the vendors to come up with practical solutions to this issue. I can't see they will want to either lose their buyer or reduce the price so they should come back with a suggestion or two.Declutterbug-in-progress.⭐️⭐️⭐️ ⭐️⭐️0
