Thought I'd better get back into the habit of doing this - we've strayed badly from menu planning in the last few months of pregnancy, but now that the baby is here, we absolutely MUST be organised or everything falls apart. Meals the next week or two have to be easy for DH or DD to make, as I am laid up with a bad back at the moment and cannot spend much time in the kitchen.
Mon 07 - steak & mushroom pie, chips
Tue 08 - beans, toast, cheese
Wed 09 - turkey stirfry
Thu 10 - sloppy joes, chips

hey heres the recipe for the spicy chicken and sweet potato bake
ingredients to serve 4
8 chicken portions (thighs and legs) but also works well with breast
1/2 jar of curry paste i use pataks tikka massalla but use what ever spice level you like
juice of 1 lime
4 sweet potatoes diced to 1cm cubes
2 tbspns oil
30ml water
place chicken, curry paste, lime juice, water, sweet potatoes and oil in a bowl mix until everything is well covered WARNING do not use your hands the paste stains for days
then cook on 200c im not sure what gas mark that is and my oven if fan this will only take about 30 minutes to cook completely.
i serve this with homemade mango chutney and chaptis and also a salad of sliced tomatoes, red onion and coriander it is sooooo nice i hope you like it to0 -
