  • Breakfasts for us M-F is generally things like: cottage cheese on crackers, cereal, toast, eggs etc. We have fruit juice each morning and sometimes porridge with fruit on top. At the weekends we try and have something cooked like a bacon or sausage butty, omelette or full english.

    Lunches are sarnies, baked spuds, leftovers, soup etc etc.

    Now cook this in the slow cooker until soft - should be 2-4 hours on High, but they are all different as you know.

    Meanwhile prepare a cheese sauce from 250 ml milk, 25g butter, 25g flour and 75g mature Cheddar or other cheese. Season with salt & pepper. Pour the sauce over the lasagne and spread it around a bit to cover. Sprinkle some Parmesan over the top.

    If you have the type of slow cooker that will go in the oven, place it in the oven or under a hot grill until golden and bubbling. I have not dared to do this with mine, I just slow-cook it a bit longer and sprinkle a little paprika on the top for effect. It should be standing for 10 minutes to settle before you serve it.

    Bon appetit! Let me know how it turned out. This recipe has become a favourite in the Champys household, even though my DH is normally not that keen on lasagne. It is a veggie dish, but if you cater for a 'must-have-meat' person, I think it would probably taste just as good with some browned mince in between the layers.

    That sounds delicious, thank you :) I do have a slow cooker, but I might do in the oven for the sole reason that I can make it in a smaller dish, otherwise i'll end up making loads and I just don't have space to freeze it at the moment!

  • I really want to get back into meal planning now the kids are back at school and I have 2 on packed lunches so I'd love to join you all if that is ok.

    Today we had Chicken and vegetables in cheese sauce with breadcrumbs onto plus apple crumble (I had a small plum one from the windfalls).

    Tomorrow - tomato soup for lunch and pizza for dinner, banana and sultana loaf

    Sunday - roast (probably beef, I'll shop tomorrow) chocolate cake

    I can't think further than that but will edit my list tomorrow


    That sounds really yum.....is it a normal banana loaf recipe with sultanas thrown in or do you have a special recipe for it? If so, could you please post it for me, need to make banana bread tomorrow with lots of brown nanas in the fruit bowl

  • Fri - Lobster (I know, but it was only £3!!) flashed under the grill with garlic butter, courgette & tomato gratin & new pots (all veg hg at the mo)
    Sat - lunch -hm tomato soup; eve meal, beetroot & courgette burgers & veg/fresh fruit
    Sun - lunch 4 me - as Sat - OH & DD - whoopsied crumpets and cheese
    eve - roast duck (whoopsied!) roast veg (beetroot, onion, courgette, kohlrabi etc)/stewed apple & yogurt
    Mon - leftover duck shredded in spring rolls with veg, chilli sauce
    Tue - Using up 1 lamb chop/1 pork chop/1 quorn fillet & veg
    Wed - sausage casserole in slow cooker
    Thurs - possible veggie lasagne (great sounding recipe champy!)
    Fri - go shopping!
    Weight loss - here we go again - watch this space!

    been really bad and didn't stick to last week's plan but trying again
    today, chicken with potatoes and HG veg
    OH away for the rest of the week so will be having
    - corned beef hash with egg and HG veg
    - seafood pasta with HG tomatoes and beans
    - Thai style fish cakes with rice and HG veg
    - something main with aubergine
    - lentil and veg lasagne or leftovers or some description

    Lunches will be couscous salad with ham, green tomato soup
    Breakfast will be sausage roll or cereal with smoothie

    Evening everyone,

    Some tasty looking menus flying around here this week!
    Mine is quite unadventurous as usual:

    Mon: Beef Bourgignon & Potatoes
    Tue: Spaghetti Carbonara & Garlic Bread
    Wed: Salmon or Trout in a Sauce with Potatoes
    Thu: Sausage & Butterbean Casserole (stolen from here I think, but still to try)
    Fri: Thai Green Chicken Curry & Rice
    Sat: Pizza & Salad
    Sun: Steak Diane & Potatoes

    Lunches are sandwiches, toasties, soup etc.
    Breakfasts are cereal, toast, bacon/eggs at weekend.
  • I'm new to properly planning (as opposed to having a vague list of meals!) so hopefully this'll keep us on track!

    Breakfasts are cereal/toast and juice/tea

    Lunches for me are either hm soup or school dinners for the days when I'm out all evening, they're quite tasty and it's nice to have a decent meal if we're out late.
    H2B is a law unto himself with lunch, but he has got chicken, bacon and avocado salad at least twice!

    Dinners:
    Sun Sausage and leek hash
    Mon Filled pasta and tomato sauce (on offer in Sainsburys the other week)
    Tues Omelette (with any odds and sods in the fridge)
    Weds Something from the freezer (either Sausage and leek hash or Chicken biryani)
    Thurs Subway (treat night - we go straight from work to Scouts and get home about 10.30 so we deserve it!)
    Fri HM tuna and red onion pizza
    Sat Meatball casserole

    Here's mine - going to be adventurous this week & 'make' a steak pie!!! This may seem unremarkable to most but to me, if it works, it's life changing!!

    Sunday – Cottage Pie with roasties, mashed carrots & parsnips & broccoli

    Monday – Spaghetti Bolognaise (with left over mince from Sunday) & garlic bread

    Tuesday – Quick spiced chicken thighs with emergency biryani (from Econ. Gast. Programme)

    Wednesday –HM French Onion Soup & Beef burgers in baps

    Thursday – HM steak pie with suet crust, potato wedges & broccoli

    Friday – Sausages with baked potatoes & cheesy beans

    Saturday – HM pizza with couscous

    running out of freezer boxes so we are eating from the freezer this week

    monday - hm spag bol from freezer
    tuesday - hm pork and butterbean stuff from freezer
    wednesday - hm chicken madras from freezer
    thursday - hm lasagne from freezer with salad
    friday - pizza night (iceland not dominoes) no garlic bread, salad instead
    saturday - jacket potatoes and salad
    sunday roast chicken and salad

    treats - chocolate brownies, rock buns and anzac biscuits

    lunches - hm soup, sandwiches
