    Hi Trow,

    Cook (soya?) mince and veg to make a bolognese sauce. First night use it to make lasagne, second night have spaghetti bolognese, third night add chillies and kidney beans to make chilli with rice.

    Cook quorn (normally I'd roast a chicken) and serve with veg and potatoes , second night use cooked quorn and veg in a creamy white sauce and pop some of it into pastry to make a pie. Third night add some spices and mushrooms to the remaining quorn in sauce and serve with rice.

    Cook (soya) mince, carrots and onion, second night add in potatoes to make a kind of stew, third night thicken or mash potatoes in and make into cornish type pasties.

    I'm not vegetarian, so these suggestions may not be suitable, but hopefully they'll give you some ideas.

    I've just bought a new book and there a couple of new ideas for bolognese style mince - one layered with polenta like lasange and another in a risotto...thats 4 dishes if you inc sag bol and traditional lasange from one batch of mince

    I cook my mince and then make -

    Lasagne
    Chilli
    Bol for spag bol
    Dry chilli mince for pizza toppings or tacos
    cottage pie
    mince beef and onions

  • A cheap bacon/gammon joint - cooked in the slow cooker....

    First meal - gammon, mash and peas
    Second meal - Gammon fritata or quiche
    Third meal - Lentil soup using cooking liquid and last few bits of gammon/bacon

    Depends on how big eaters you are and the size of the joint you could eek it out longer...

    FAB! Keeps these ideas coming. I have just watched Hugh's latest programme on Channel 4 on demand, and am totally inspired to make a rich tomatoey bolognaisey sauce, chilli and moussake - for anyone that saw the programme, it was just perfect for my question - even if it was about meat I will be recording the rest of them.

    I'm tempted to try a thick lentil 'mush' to have as soup (watered down) one day, spiced up for dhal with maybe roasted root vegetables the next and a shepheress pie with added tomato's and veg the next.

    soon2bjobless, that was inspired by you talking about lentil soup :)

    Pink-winges, those ideas are great, I can easily adapt meaty recipes, and quite often do a quorn mushroom supreme thing with pasta or rice - hadn't though about filling pastry with it!

    Hi all

    I am trying to come up with ideas for a friend who is struggling to find time to cook healthy nutritious meals from scratch every night for her family.

    I do lots of batch cooking - and only cook from scratch about twice a week - but i have 2 gigantic freezers - but she does not have a separate freezer - only a small freezer compartment on the top shelf of the under counter fridge.

    So i am trying to think of things she can batch cook - but then turn into 2 or 3 different meals so that they don't have to eat the same meal twice in a week.

    BUT the only things i can come up with is:

    DAY 1:
    cook a massive pot of carrot, lentil, soup with lots of tins of tomatoes in it. Soup and crusty bread for tea. Put rest in fridge in meal side portions.

    Day 2:
    fry mince and onions, add soup from day 1, use as the base for a shepherds pie or as a bolognaise sauce.

    Day 3: pasta and tuna

    DAy 4
    add kidney beans and chilli powder to the mince and serve with rice for chilli

    any still left can go in the small freezer to be used the following week.



    or my other suggestion is:

    DAY 1: Roast meat dinner with veg

    Day 2: something completely different to avoid boredom

    Day 3: leftover meat chooped into small pieces and stir fried up with leftover veg and leftover pots with whatever spices you have on hand

    Day 4: Leftover roast dinner turned into soup...

    and of course there is rubber chicken....

    Does anyone have any other suggestions or think this might work...

    i must confess i have not tried this myself as every time i cook i cook enough for 4 meals and eat one meal and put 3 in the freezer...

    any ideas appreciated...

    There is a cookbook called Economy Gastronmy based on that, bedrocks & tumbledowns they call it.

    Its cheap at Amazon.
  • Not sure some of those ideas would work..EG,Plan 1.days 3+4..would adding kidney beans and chilli powder to the day befores tuna n pasta realy make a nice chilli?...or plan 2, day 4...I dont imagine 4day old roast meat would make a very nice soup,?
    im not sure,but without a freezer she may have to eat the same "meat" 2 days in a row,but just in a different version..
    Does your friend have a slow cooker?..there are some realy cheap ones in Argos at the moment...very little preperation required and the cooker basicaly takes care of itself..ideal for stews,currys,pot-roasting,soups etc...I wouldnt have time to cook from scratch every day if it wasnt for my slow cooker to help me out...good luck
