Ham hock from Morrisons, cooked very gently, and then all the meat pulled off gives lots of meat which you can use in many ways. And lately I've been doing one lamb shank which I cook very slowly with soaked dried beans, tomato, celery, onion, stock etc, then pull the meat off. That usually does two of us for two meals, and OH never realises he's actually eating very little meat because it all tastes so good !0

I frequently buy a carrier of stewing steak, I really should see how much is in it, I know what I use rather than how much it weighs if that makes sense. This is what I do as we get bored of it in gravy so I split it.
Beef curry (for about 6 people) - bulked out with veg and lentils served with rice or chips, naan bread if I can be bothered
Moroccan beef (for about 6 people) - usually made with lamb but lamb is more seasonal/expensive so we tried it with beef last year, yumm!! Adding dried apricots, sultanas, thinly sliced peppers, carrots etc then served with cous cous
Beef hotpot (for about 8 people)- plenty of veg in this one, cooking in a large dish on one side cobblers and the other dumplings sometimes cooked with beer if there is some can serve with veg, mash or just when there is some hot pot with a roll
When serving with rice or cous cous it's much easier to bulk out and serve less meat as you can add to that too, roasted veg or something yummy

My butcher does 'meat packs' that are roughly half a carrier bag fullAnywhere is within walking distance - if you have the time!!0 -
I'm a big fan of bacon bits - my butcher sells of ends of bacon - some thick some thin - great for soups, cold sandwich ham, rissoles, vegetable bakes - and dead cheap0

I love the rubber chicken idea & often stretch out for a few meals & stock etc but I am wondering what other meats you can use I think I've heard of people using a rib of beef or ham are there any others/recipes/ideas

I bought a cheap beef roasting joint last week, I roasted it on sunday, then had beef curry on monday and made soup on tuesday with the last little lump. Anything can be stretched a few days providing it is big enough.
Lamb is especially nice, or anything with a bone, as it makes great stock.0 -
I used a small gammon joint the other day (£3 from Co-Op) for five meals - boiled ham for dinner, ham rolls the next day for lunch, a bit chopped up to add to a pasta salad for the following day's lunch, and some added to a soup which was two days worth of dinner. Also used a bit of the cooking liquid to make the stock (to which I then added other stuff). Not bad for three quid.0

Most of our dinners are evolutionary, whatever's leftover goes into the next, I'm surprised I haven't poisoned my lot!!0

I stretch most joints I buy, pork is used as roast, then curry then rissoles, leftover beef makes beef in red wine & then cottage pie, lamb gets made into shephards pie, lamb casserole etc.
Then there isElastic Mince
Brown the mince, I usually buy a 500gm pack, add onion chopped small, grated carrot, red lentils & small handful of porridge oats & tinned toms or puree. Cook in enough water, adding a couple of stock cubes if you want to.
Divide the mixture into 4.
Meal 1 Tex Mex chilli, add a tin of kidney beans & a tin of sweet corn & enough cooked rice for each person, serve with fajitas, mayo or yoghurt, shredded lettuce & grated cheese. Or roll up the fajitas with the mix inside, cover with cheese sauce & bake in the oven.
Meal 2 Cottage pie, add baked beans if liked & call it cowboy pie.
Meal 3 Spag bol or Lasagne, add extra tomato puree some oregano. Serve with garlic bread & salad.
Meal 4 Curry, add apple & curry paste & serve with rice, Nan bread & mango chutney.

I did some roast pork last Sunday (for a family of 2 adults, a very hungry teenie and DS2, who is 5 and eats very little) - admittedly quite a big piece, though. DS1 and DH had it cold for tea on Monday and I've frozen the rest. There's enough sliced for another roast dinner (heated up in gravy) and some diced, which I'll cook with some baked beans and crispy bacon for some kind of beanie pork dish, maybe with mash or jackets.0
