    We are having Roast Pork tomorrow. Monday night will be chinese pork and noodles, Both boys will have pork sandwiches for school/nursery. The rest will be sliced and frozen into portions for using another time in casseroles/curries etc.

    Another favourite of mine is Roast lamb, mince up the cooked lamb the next day, boil the bone for stock and then use the mince for shepherds pie, using the stock for gravy.

    Spaghetti bolognaiseand then add chilli beans to the leftovers to make a chilli curry for the next day or two.

    Any chilli leftover can always be bulked out with tinned tomatoes and red lentils to make a lasagne. It's the one time my OH realises he eating leftovers, when he gets chilli lasagne.

    Rubber Gammon,

    Gammon, roasties, veg and cauli cheese
    Sandwiches
    Salad
    Fried rice with all the crumbly bits left! (fried rice has whatever I have in- chopped omlette, onions frozen peas and mushrooms value prawns, cooked basmati rice fried in sesame oil and a dash soy sauce-yum)
    the gammon freezes so you don't have to eat it all in one go!

    I am in awe of you lot that can rubberise meals. There are 5 of us, 3 adults and 2 kids and before xmas I took advantage of Mr T's half price beef joint offer. I bought a joint that said would feed 8-9 people. We had roast that evening then there was only enough left for sarnies the next day :eek:

    Fill the plate with veggies/yorkies/stuffing first (all v cheap) meat goes in the little gap left - you use less but they don't notice cos they have a full plate in front of them:D

    the trick is to hide the joint from OH! Slice of a couple of slices each and shove the rest somewhere to cool down before stashing it in the fridge

    Elastic Mince

    Brown the mince, I usually buy a 500gm pack, add onion chopped small, grated carrot, red lentils & small handful of porridge oats & tinned toms or puree. Cook in enough water, adding a couple of stock cubes if you want to.
    Divide the mixture into 4.
    Meal 1 Tex Mex chilli, add a tin of kidney beans & a tin of sweet corn & enough cooked rice for each person, serve with fajitas, mayo or yoghurt, shredded lettuce & grated cheese. Or roll up the fajitas with the mix inside, cover with cheese sauce & bake in the oven.
    Meal 2 Cottage pie, add baked beans if liked & call it cowboy pie.
    Meal 3 Spag bol or Lasagne, add extra tomato puree some oregano. Serve with garlic bread & salad.
    Meal 4 Curry, add apple & curry paste & serve with rice, Nan bread & mango chutney.
