With a view to fuel economy, I wonder if we could start a new thread for what I call Roll Over Cookery, whereby we cook a double quantity of certain foods with a view to having the cooked base ready for a different meal the next day, reducing time and fuel. If we had a wide range of these meals at our fingertips I suspect we could considerably reduce our cookery fuel bills over the period of a year. Happy to kick off with the following:

Cook a double quantity of mashed potato and cabbage. Next day, (fry some onions - optional but makes it extra tasty), grate some cheddar cheese and mix together with the potato & cabbage. Reheat in microwave or oven for a savoury supper which can be augmented with a rasher of bacon if desired.

    I was thinking of 'minced beef and onions'.

    Use half with added carrots/peas and topped with mashed potatoes for Cottage Pie.

    Or instead of mashed potato topping, make some dumplings and place on top of the minced beef mixture for around 20mins in the oven for a 'kind of cobbler' - I'm always a bit suspicious that the 'savoury scone topping' of a cobbler may not cook properly underneath.

    For the next day, add some chilli beans and half a tin (or full tin if serving a family) of chopped tomatoes and serve with boiled rice for chilli con carne (won't be overpowerful unless you add extra chilli to spice it up a bit more) OR top a jacket potato with it..
  • chicken in a white sauce with mushrooms for a chicken and mushroom pie then add some diced ham and garlic to the mix for a chicken supreme - delish with pasta or rice

    basic tomato sauce made from tin tomatos, onions, garlic, herbs, mince.

    Can be used on pasta, for chilli, lasagne, in fajitas etc

    Our staple stew is a ratatouille type affair. I make double and use the leftovers for (vegetarian) lasagne next day. When making the cheese sauce for the lasagne next day, I also cook some leeks or a cauliflower and make cauliflower cheese which goes in the fridge for the following day.
  • Good timing! This very afternoon when I was parboiling some potatoes for a (very yummy) potato/onion/cheese/bacon bake, I boiled up the rest of the potatoes in the bag and mashed them ready for tomorrow's cottage pie.

    And the other half of the mince I cook up for the cottage pie will go into the freezer for use in something else.

  • I do this too. Yesterday it was spaghitti bolognaisse. Today it was bolognaisse on Jacket potatoes. Nothing done for tomorrow though. I like your idea with the cheese sauce magentasue. I will remember that one for the veggies in the house. I am all for saving time as well as gas.

    My mum would always make a chicken roast on a Sunday and leave enough for a chicken curry on the Monday. Nice with left over cabbage stirred in to the curry (the kids don't even notice.)

    if i make too much mashed potato remainder goes into fridge to make fish cakes the next day!

  • today we had roast pork and trimings for dinner for tea they had (i was at work) potato cakes (with veg in) and beans (which was also on dinner)
    and tommorrow dh is taking roast pork and stuffing sandwiches whitch is a real treat for him lol

    or we have chicken on sunday dinner and that makes sandwiches and chicken pie
