I find it a bit odd that you would trust an automatically-generated, computer-printed date on a label, over the eyes and nose of someone who works with food for a living. If a food item were 'in code' but crawling with maggots would you still consider it fit for consumption?

so if it doesn't have maggots in it but it's out of date and could make someone ill, it's still OK to sell it to customers?
Please, please tell me you don't work in any sort of catering establishment and if you do then tell us which one and we can avoid it like the plague.

Not me, the putative chef of the theoretical kitchen under discussion. My point is that I don't understand why people will trust labels but not their own senses.

No, unfortunately it's very difficult to track down due to its being illegal.
However gross maggoty cheese sounds, it should be remembered that that is how Stilton was often served in this country in the 18th century:
