    Any help halloweenqueen? haven't tried it myself.... but looks simple so I might have a go :) ... hubby loves pate on cream crackers...

  • Hiya,

    This is my absolute favourite pate.

    250g chicken livers
    125g streaky bacon
    1 green eating apple, peeled and chopped
    1 onion, chopped
    120 ml red wine
    2 sprigs parsley
    salt and pepper
    2 tbls clarified butter

    Roughly chop liver and bacon.
    Sauté them with apple, onion, wine and parsley.
    Cover and cook gently 30 minutes and leave to cool.
    Purée mixture in food processor until it's the pate texture you like.
    Season with pepper, taste as it may well not require salt.
    Spoon pate into ramekins or crock and smooth the top. Chill until set.
    Pour clarified butter on top to seal.

    I know the apple sounds a little odd but it really works.

    I love chicken liver pate, and my mum used to make a fantastic one. I tried to make it once and it was a disaster, the kids begged me to throw it out. :o

    I usually follow the pate recipe in the river cottage meat book, it's a coarse pate but very flexible about ingredients and very scrummy. (smooth pate's require a lot of work to get them smooth, coarse is just a kinda lazy way of doing pate ;))

    Would it be cheaper to make pate rather than buy it? We buy pate for 64p, the healthy one from Tesco. If I wanted to make it, does anyone know a recipe?
