I had my main dinner at lunch time today, cottage pie with peas and sweetcorn because I have aquafit later and would be eating my dinner later other wise so will probably just have cheese on toast later but these recipes are sounding so lovely its making me hungry just thinking about them! definitely have to try the mixed bean and pasta bake sounds lovely but as its so hot today (at least it is in London) I would recommend a nice salad for dinner

  • I'm going to the local pub with other half as I have a voucher for two main meals for a fiver. I'll probably have the Italian chicken which is delicious.

I'm having tagliatelli with smoked salmon and herbs - sounds posh but dead cheap. Boil pasta how you like it, drain it, stir in chopped up smoked salmon scraps (Mr S do them for about 88p) herbs from the garden / windowsill, and a tub of low fat creme fraiche, salt and pepper. Only takes 10 minutes too! Serve with green salad.
  • QUOTE=edinburgher;24354677]We'll be having smoked salmon risotto, which is very tasty and surprisingly cheap.

Sweat an onion and a few cloves of garlic with a good lump of butter, add arborio risotto rice and coat with the butter, gently add about 400ml of hot chicken stock over 20-30 mins (stirring constantly), once this is absorbed season with salt and pepper before folding in the smoked salmon :)

If you use trimmings as opposed to good smoked salmon it only costs about £2.50 for enough to feed four to bursting. Also, if you're a fan of making your own stock it's one of the tastiest ways possible to show off the quality of home made over stock cube ;)[/QUOTE]

    Thank you.

This is what I had tonight and it was very very very nice:drool::drool:[

I've had Tofu and veg stir-fry with rice and oyster sauce.
    Then a home made scone.

Edinburgher... I made your risotto last night, and it turned out wonderful!!! I hope you don't mind, but I changed your recipe slightly. When I put the rice in, I also put in a glug of white wine. Then at the end, after folding in the salmon, I grated the zest off a lemon and put that in too. It was lovely :)
  • Tomato pasta with garlic bread me thinks! Some good suggestions in this thread.

  • Hi,

We are having pork stir fry from left over roast pork and usual veggie suspects.. with the addition of water chestnuts and bamboo shoots... :D Tomorrow is roast Lamb, if there are any leftovers... (hide it quick..) will become a lamb pilaf style dish.. Both joints bought from the reduced shelves..

    Hungry now.... :)
