As for the roast potatoes, par boil them first for 10 minutes and give them a shake in the colander to fluff the outsides first, while they are boiling put a large dab of lard in a roasting tin and put that on the top shelf of the oven, when it's melted and hot then put the drained potatoes into the fat, give them a small sprinkling of salt and maybe some garlic granules and then pop into the oven on a quite high heat, keep an eye on them and when it looks like the tops are starting to brown, turn them over, I usually turn the oven down and they are in there for a total of 45 minutes to an hour.

Lard AND salt:eek::eek::eek: Blimey, I think the ready prepared ones might be healthier actually!! I just throw mine (unboiled) into a tiny bit of hot sunflower oil for an hour, maybe with some herbs if we've got guests!!!!!

I use those fry sprays that are suppose to be 1 calorie per spray and my husbands roasties turn out gorgeous.

That is the only reason why he gets to stay is his roasties :rotfl:

Not sure what we are going to do during the summer.

Option 1: Sit down with DH and work out weekly budget. Try to get him to agree with you and make him think it was his idea all along.
Option 2: Go on strike for a week or two. Give him a housekeeping allowance in cash he has to keep to and tell him to get on with it.

I have the same situation here. My trick is to say "why don't you relax or play with the kids, while I get the dinner ready", if he can't see how I make the food it is good. For example the other night, I made home made chips, he walked into the kitchen and said, you can't make chips that way. I had parboiled them, put a little oil on them and sprinked some cajun seasoning on top and was putting them into the oven. I repeated what I said above, and said I will call you when dinner is ready. When the dinner was all served up his appetite had grown and he demolished the dinner and wanted more chips!! However, I am having a problem with sauces for example we used to use a lovely Schwartz Shephards Pie Mix and a Creamy tomato pasta bake sauce and a savoury mince packet mix too and since becoming os I have cut these out, but boy do we miss the flavours of these, If any one can replicate these, I'd appreciate it. Or if anyone else has similar problems with regards to the packet mixes let me know.

for an easy creamy tomato pasta sauce i use : carton of passata (or tin of chopped toms),half a tub of creme fraiche and a bit of low fat cream cheese / mascarpone
add herbs if wanted and blend if you like

yum yum really easy and creamy

add tuna to make tuna ,tomato pasta ,even my fussy 4 yr old eats this and asks for more !!!

i used to be the same ,would always use packets for everything, chilli, shepherds pie etc but now the only pkts i buy are the occasional cheese / parsley sauce mix to keep when im too lazy to make my own ! :o

It seems like a culture problem to me. You have had your lightbulb moment but OH still doesn't want to feel 'deprived'. Sorry, but this is how people get into money problems in the first place. I don't have a 42" plasma screen TV and I don't care. I drive an 8-yr old car that is a bit tatty but I don't care. I would rather live like this and know that I can pay for what I have.

I think the other posters are spot on when they say you need to kid your OH that what he is getting is better than before. It is all about presentation. Supermarkets and manufacturers do this all the time. What is the difference between 'luxury' goods and normal goods? Usually not much apart from the packaging. Go with the Jamie/Nigella/Delia thing and see if he changes his mind!

    Good luck!

You could always try what my mum used to do when we were little kids - she was a housewife whilsy my dad was a full time fire man.....

For example, when he was at work she used to decant HP sauce into Daddies sauce bottles because it was cheaper and he proclaimed that he only liked Daddies. He always announced that Daddies is th ebest even when unwittingly dipping his chips into HP!!

To this day she still does it (even though they have absolutely no money worries) - I think more out of twisted spite than anything else!!!
I wonder how many times his "less spicy" chilli, curry etc was really meat and not dog food!! Some of my earliest memories including swapping things out of one packet into another! Didn't realise this wasn't normal for years!
Parents don't you just love 'em??!

LOL, Lillibet, I did say a small amount of each :D We don't have roasters that often which is why I can get away with doing them like this. They just don't seem to taste right done any other way. I rarely put salt in my cooking but this is an exception. Except for curry. I've tried making it from scratch without salt but it doesn't work, the flavours just don't seem to come through in the same way. Even my indian neighbour agrees and she is on a real health kick at the moment.

Never mind your OH I'm sure your neighbours appreciated a home cooked meal - I know I would have! Bought roast pots etc just do not taste the same, apart from the fact they are not OS.

Its de-motivating when your partner doesn't back you so I think you need to get him on your side and there are some good tips from people on how to do that here. Don't be tempted (or bullied) into giving up the good work. In future your kids will thank you for good food. It's my belief that eventually a lot more people will feel compelled to becoming more OS for reasons such as economy, environment, recycling etc and that people who aren't OS will be seen as behind the times! At least that's what I hope! I'm lucky my OH supports me in this kind of lifestyle, in fact don't they say the converted are the worst.

    Good luck to you!!
