I've added this to our existing thread on eggs to keep the advice together.

I've read a couple of pages of this thread as I want to separate eggs and freeze them - the whites will do well for meringues / macaroons, but do the yolks become denatured / unusable for any purpose? I was thinking of using them for a sabayon or to make custard from scratch in the winter, not sure they will be good for anything apart from omelettes / scrambled / baking.

  • We have about 42 eggs, 30 of which were bought today from farmfoods as they were £1 for 15 (Usually pay £1.35 for 15 from Aldi, so went a little crazy).

What I'm looking for is recipes which use eggs that once cooked/prepared can be frozen (if this is possible) for use another day when we don't have time to cook from scratch.

    Thanks in advance.
    Chris.

you can freeze eggs for use later

But you have to whisk them first before freezing, egg yolks whole dont freeze well

Cheap suppers - frittata - chuck in whatever you have, when cooked, wrap in greaseproof and then foil and freeze

I was going to suggest frittata or quiche. You can freeze in slices for packed lunches if that helps.

What's the best way to freeze eggs, is this in freezer bags (each egg whisked and froze separately)?

When defrosted can they be eaten straight away, or do I need to reheat and cool before putting into a packed lunch?

Both Fritatta and quiche don't need to be reheated. They could probably go into the lunchboxes frozen and be defrosted and ready to eat for lunchtime.

Just whisk as many as you think you will need, say a three egg omelette and freeze. You might find setting a bag in a small container to freeze easier. Once frozen remove bag from the mold, seal and store
