I went to weigh in today (a day earlier than last week) and I put a pound on , annoyed but not overly concerned as it is TOTM and I normally put some weight on then! OUr menu for the week is sort of planned (might need a bit of tweaking mid week!) and I am back tracking my food (had a Boots Shapers Sandwich and Shapers sparkling ginger beer and that is already 320 kcals )

I think the comments to ignore and stick two metaphorical fingers up at are the ones from "well meaning" family members that are actually rather denigrating!

hmm been a slow week here - been going to fitness classes but although Im getting a lot fitter and I can feel hints of muscles where there were only wobbly bits I havent lost as much weight as I would have liked. Hopefully the rule about muscle weighing more than fat is true and it will all come off at once soon.

Pasta can be cooked in the micro. Just put in a bowl, cover with boiling water and nuke til done (about 5 mins? I think?). Best to get the smaller pasta shapes for this. Homemade pasta sauce is a lot nicer but you can get by on jarred - just check the labels carefully for cals. Add tuna/sweetcorn etc. In fact veggie mince (quorn) just needs heating so you could defrost/heat that in micro, add sauce and have spaghetti/pasta bolognese.

Quorn chicken pieces - microwave with veggies, stir in stir fry sauce, serve with noodles (all noodles, especially the thinner ones, will 'cook' in a bowl of boiling water - you may need to refresh the water if you get thicker noodles but rice noodles etc definitely cook fine like this.

'Beanfeast' or asda own brand 'savoury mince' - dried savoury mince stuff that you cook with just water (same aisle as dried beans etc and can be done in the micro i think?) topped with mash made from potatoes steamed in micro. = shepherds pie type thing (ok no crispy crust but needs must!)

Jacket potatoes with normal toppings (tuna mayo, beans, etc).

Chilli - canned beans + steamed veggies + quorn/meat (if you can micro it?), then I used Asda's chilli sauce which is fairly low cal, serve with jacket pots or make it quite dry and serve in wraps, fajita style.

Sorry about all the veggie stuff but I am :D But the good thing is quorn etc only require heating, not cooking, so well suited for micro cooking.
