Finally got to read all the thread (phew) but still very interested. Signed up on the Yahoo site and waiting for approval!

Hopefully I'll be able to tootle around that site and get some grains and start myself going!

Thanks for this thread - anything that helps someone else's health has got to be good.

    Hi leonie and everyone else,

I started reading this thread after you replied to my sourdough suggestion - I'm wondering about kefir made without milk ( I have a severe lactose intolerance, which is one reason I make straight sourdough - ie no milk powder) Dom's pages don't have an awful lot on that so has anyone done it? What's it like? Or will it - as some have suggested - help with my lactose intolerance?

    All help gratefully received!

    Hi Mrs Bear,

Ticklemouse kindly gave me some kefir grains at the OS meet in Blackpool and I have just had them for a couple of day in dairy milk to refresh them, but today I washed them and put them in sweetened soya milk, as I don't like dairy milk. Will let you know in a couple of days what the results are.

    Hi everyone,

I'm new here, and was just scanning parts of this thread, and saw the bit of trouble that came up about trading kefir grains on this site.

I thought I'd post this website, which is a kefir grain exchange board. There are people from all over the world on it! I hope it helps all of you to share your ever-expanding kefir grain "crops" with each other.

    Cheers!

Here I am back, reporting on the Soya Milk kefir - RESULT! I got a thick, fizzy, sweet-sour product after only 24 hours. The soya milk separates a bit but stirring it brings it back together.

I am not sure I like the taste, but it is probably an acquired taste, it is nothing like soya yoghurt! But I shall persevere because of the health benefits.

So far I have had the grains for too short a time and they do not appear to have grown, but watch this space, soon I might be able to offer some babies.

    Thanks for that Caterina!

I think I might try coconut milk - Dom's site mentioned it but didn't go into details. Ah well, nothing ventured, nothing gained! I'm waiting for some grains and I'll let you all know how coconut milk goes!

    Ta v much,

    Some replies to various things

    1) UHT will slow down kefir making. Full fat raw milk is fastest.

    2) Golf ball blob of kefir is probably too big to be effective, I'd try splitting it

    3) Lactose intolerance- there is evidence that kefor use can reduce lactose intolerance. Ref should be on the yahoo site

    http://health.groups.yahoo.com/group/Fermented-foods-UK/

    4) honey in kefirin- I don't believe the tiny amount put in prior to ingestion will have a significant effect. It would not be a great idea to put honey into with the blob. Yeast is not destroyed by honey, think of all the mead made over the centuries. Mead is often a higher % alcohol than wine too.

BTW I have an excess of water kefir I'm now offering for postage costs on the yahoo site if anyone likes pop type natural drinks.

Hope that is some use !

I've got my kefir now :D By coincidence a non-MSE friend knows Mel and passed some on to me, I need to get round to joining the Yahoo group now. It's early days and I'm getting it settled in, so I won't try eating any till tomorrow when it's been pampered with some full cream milk.

I tried a taste of friend's culture on Saturday and I had scary tummy on Sunday  Until I get used to it I will stick to eating it in the evenings when I'm at home, just in case it all gets a bit *unsuitable for public discussion* ;)
