    Don't panic!

    You have the ingredients for a sponge cake. Do you have tinned pineapple or peaches etc?

    An upside down cake will be fine in a well greased pyrex. Ignore the recipe requirements for brown sugar, use what you have.

    Lay tinned fruit on the base of your well greased pyrex and top with a sponge mix for a really basic version, or follow the recipe above for a more sophisticated version.

    We're here if you need help with simplifying the recipe :)

    I don;t have any tinned fruit. I have fresh apples and pears though. I will have to do this tomorrow so am likely to be in a panic!

    How about some simple shortbread not a cake but homemade, simple this is often a winner.

    You could slice the apples into wedges, and saute in butter and sugar, then arrange in the pyrex and pour over the sponge mix. Mock tart tatin!!

    Ooh, I like the sound of this! How big a pyrex? Does it matter?

    I forgot shortbread! I'm actually quite good at making it, too. Perhaps I can do that AND the mock tart tatin if I have time.

    or if i was you i would make a basic sponge mix, then chop my apple, lob it into my sponge then a quick stir and then bake

    Nope, whatever you've got and the apples will fit best into. :) I'd think about 9inches would be good though, as a guide.

    Make a bit extra butter / sugar toffee-lovelyness and pour that over the apples before the sponge :)

    Aren;t scones time-consuming though? I used to make them and I had to rub them in. No way will DD let me do that!! I did used to make very good scones. Why do I think Im a rubbish cook? I'm clearly just out of practice!
