How about banana muffins? Great for using up those storecupboard ingredients and bananas you wouldn't normally eat. Just had a huge hunk for my breakfast. This is just the simplest recipe! Would recommend substituting the butter with something lighter and cutting back on the sugar though. Enjoy :beer:Value-for-money-for-me-puhleeze!

Hi. Yes you can freeze muffins.
I make cakes and cut into slices, wrap in basics plastic bags and freeze in a large tupperware box. Take out in the morning and put into kid's lunchboxes. Or if you want a quick snack - they only take a short while to defrost as already sliced. Do you have cocoa as I have a great recipe for rich choc muffins if you would like?£2012 in 2012 = £34.440 -

I did a very easy sqaure sponge thing (cut it up into about 20 pieces) and just used different things to top it with. It was deep enough that you could easily cut in half and spread jam in before decorating the top...........

Recipe for Rich Chocolate cake
180g butter
2 tsp vanilla
1 and 3/4 cups sugar
3 eggs
2 cups sr flour
2/3 cup cocoa
1 cup water (but I use milk)
Mix butter, essence and sugar.
Add flour and eggs, cocoa and milk/water.
Mix with electric whisk for about 3 mins.
That's it.
On the recipe it says put in a deep 23cm round tin, but I use muffin cases and fill 1/2 full - makes about 15 large muffins.
Bake 180 for about 30 mins for muffins, 1hr 20 for cake. Stick a knife in too check - should come out clean with no stickiness!
You can add a topping if you like.
100g chocolate
30g butter
1 cup icing sugar
2 tbsp hot water (approx)
Melt choclate and butter in bowl over hot water.
Gradually stir in icing sugar
Then stir in enough hot water to mix to a spreadable consistency.

Sorry I wandered off to make my 2nd xmas pud (it was one of those impulse things) so if this is too late then I am sorry
I use a 8inch (roughly) square tin
110g self raising flour
110g caster sugar (or normal sugar blended up fine)
110g marg (I use the st0rk)
1tsp baking posder
2 lg eggs
1tsp vanilla extract
stuff to decorate with
preheat oven to 160C, grease and line the tin, bung everything in the food processor, stick in tin and level out, bake for approx 20 mins then cool on a wire rack

Its essentially a boring sponge but I made fondant icing and added colours and sparkles to make it more interesting. Just thought it might be an easy one with limited ingredientsEmma :dance:

Well muffins (ty hitatotatus) are baking AND my home smells delicious! My two used to love it when we were skint because I always made shortbread, jam tarts, butterfly cakes, swiss rolls and sponge drops or I would make fairy cakes and cover them in jam and dip in coconut .
Try twinks Hob nobs too they are great.

Arrrgh! I have some Mummy friends and their babies/toddlers visiting tomorrow and I don;t have any cakes in and no time to go to the shops.
I have butter (spreadable), flour, sugar, eggs, milk but no time and even less ability!!
What can I make? I don;t have cake cases, or a proper cake tin, I have pyrex stuff though and a tin with round 'scoops' in I use to make mince pies, and a flan tin with removable bottom.
