Nope, whatever you've got and the apples will fit best into. :) I'd think about 9inches would be good though, as a guide.

Make a bit extra butter / sugar toffee-lovelyness and pour that over the apples before the sponge :)

Do the quantities of sugar and butter matter?

  • Nope not really, I'd go about equal though. I certainly wouldn't bother weighing that bit. With the sponge its obviously more of a chemical reaction and you do need to be more precise.

Can you tell I play fast and loose in my kitchen?! "Meh, that looks about right!"

  • meringues, very easy, cook them and leave them in the oven overnight to finish off and cool, them buy some cream in the morning and whip it with some icing sugar and drizzle melted chocolate over. You don't even need to pipe the meringues, I just spoon them onto the paper. People always think you are some kind of Nigella if you make meringues ;)

i can make a batch of scones in less than 5 mins - if you have time to make a sponge you can make scones in less time. don't bother cutting them out, shape in a rough round throw onto whatever tray etc. you have and score the circle into triangles from the middle iykwim and lob into a hot oven

Drop scones? What you call Scotch Pancakes down south I think? Thick pancake batter dolloped in spoonfuls onto a hot greased skillet or heavy based frying pan, allow to brown on one side, turn, brown on other. Really nice with butter and jam.
    Val.
  • That's a good idea Val, scotch pancakes are always my go-to when I have last minute visitors or want a last minute dessert/snack.

maybe it was the marge I used, or too much egg yoke! I just don't know!!

Please help me salvage my dough!

My son is trying to make scary skull Halloween Jammy Dodger cookies for the trick or treaters and at the moment I have nothing... I can't start again because I have run out of caster sugar :(

I wouldn't try kneading more flour into it as you'll overwork the dough and it'll end up a bit tough.

Try pushing it into a log shape, wrapping it in cling film and sticking it in the freezer for an hour. Then when you take it out, just cut slices off the log and put them on the baking tray.

They won't be skull-shaped but at least they'll be edible :D

  • Oh my they were so loose I couldn't even do that!!

My son had his heart set on the skulls... So against advice I managed to add some flour (it was still very soft) and rolled it... some turned out better then others! This picture is the best 6!!

Thank you for your help and advice!
