Hi everyone
I need some ideas on what to do with pesto, I have bought a jar and used a couple of tsps out of it. The problem is its only me that will eat it. So what can I do that is veggie with pesto?
Dont suppose it can be freezed can it???

If you make pizza then you can mix some in with the tomato sauce to make it a bit more interesting. In fact once I didn't realise that I'd run out of tomato puree until I'd made the pizza base, and I made the pizza with just pesto and cheese. (that was very interesting!)
I've been making a pea soup that I saw on Nigella's programme that uses pesto. Boil some water or stock with a few spring onions and a couple of cups of frozen peas. When everything is soft (doesn't take long) stir in a table spoon of pesto and blend the whole thing.weaving through the chaos...0 -

I don't see any reason why you couldn't freeze it in an ice-cube tray and chuck the odd one or two into sauces/soups. I'd be tempted to stir some into a cheese sauce for cauliflower/broccoli cheese, or just spoon some over roast mediterranean veg, or mix with cream cheese/natural yoghurt for a jacket spud topping, or stir into mash.0

also it's nice stirred into pasta - add fried onions/mushrooms/croutons- whatever you fancy/have in the cupboards.
you can add it to risotto - just stir in a couple of tablespoons with the stock, and add some lemon juice at the end to balance the richness.weaving through the chaos...0 -
You could mix a tbsp into home-made bread dough for a flavoured loaf, or brush it onto pastry offcuts to make breadsticks; or spread some over the base of a quiche before adding the filling? I also really like it mixed with mayo in a chicken sandwich, or added to ministrone soup!2015 comp wins - £370.25

I second the pesto mayo idea - great with mozzarella and sun dried tomatoes in a sandwich. Works nice mixed through pasta or gnocchi and on toasted panini/ciabatta style bread."Who throws a shoe, honestly?"

One of our yummiest light lunch / brunch ideas:
Split an english muffin (or a bagel etc) and toast - spread with pesto, heap with fried mushrooms and top with a poached egg
yum yum yum!
Once or twice I have also used it in a sandwich - ciabatta, pesto, cream cheese and rocket - delish!0
