I add it to plain cous-cous for a nice flavour. Also works with cheese on jacket spuds. And hubby has it in salad sandwiches

In the spirit of experimentation I added some to some hm salmon fishcakes the other week. Just mixed it in with the mashed potato. It was lovely. I also add dollops to hm pizzas and mix it into any sauce I make for pasta. Great with salads too.Tess x

I buy the Vegan version & add it to mashed potato - mmmm deeelicious

Never thought of adding to mash
very good idea and would make a pleasant change from plain, mustard or horseradish.
OH likes pasta with Pesto with Mozarella over the top and put under grill for a few minutes.

Has anyone tried making pesto without the pinenuts?
The last time I made pesto was Dec 2001 and Dd had an allergic reaction to the pinenuts :eek: I've avoided it ever since and I miss it.0 -

try mixing it with philadelphia (or supermarket own brand) and thin it with a little milk for a sauce for chicken. OR my sis in law puts in inside a chicken breast and then wraps in parma ham and oven bakes. However now we're economising parma ham is not on the shopping list......0

stuff chicken breasts with a mixture of pesto & cheese -either feta/ mozzarella / cream cheese
stir into rice / pasta / cous cous
use on slices of ciabatta then top with feta and grill
use in mini pastries ,brush some pesto on the bottom then top with roated cherry toms and cheese
stir into mash or scoop out jkt potato, mix with pesto and pancetta or crispy bacon and refill the potato shell
stir into a sauce for added flavour
use on a pizza base
make warm chicken pesto salad
marinade meat chunks in thinned out pesto then put on a skewer and grill or BBQ

When my d11yo son was about 13mths old, I had a jar of pesto out and he reached across and grabbed the lid (with the thick layer of pesto on the inside) and licked the whole lot off!! :eek: :laugh:
It was then that I knew he wouldn't be a fussy eater like his paternal side of the family:rotfl:
