NEWSFLASH!!
DS has just come in and said he will try the pesto - without me even asking him! He is starting to get more 'adventurous' with food which is fab!
But there will still be some leftover....0 -

Mix pesto with mayonaise. It's great in sandwiches and with salads.:hello:0

Use it in vegetable soup, it turns it into 'pistou' - there was another thread about leftover pesto here, if I find it I shall post it for you, lots of ideas there.

Mix it into some couscous with chopped veg, ie toms, mushrooms, onions. Yum, yum! Great with fish.0

I'd go with Caterina's idea of soup - vegetable soup is one of our standards, chopped herbs in the summer, pesto in the winter.
Pesto is nice in tomato sandwiches too, scrape it on the bread instead of or as well as butter.0 -

I make pancakes with mine- 5floz milk, 4oz SR flour,1 egg, 2tbsp pesto, oil for frying Make the batter [including pesto] as per normal small pancakes and fry. They can then be frozen or I serve them with a bit of creme fraiche and smoked salmon [from Lidl!!] on top. It's great for parties because you can prepare them in advance.

I made a dip tonight using pesto to go with homemade potato wedges. I mixed equal parts of pesto with low fat yogurt .. added a couple of squeezes of lemon juice. It was lovely and even the fussy youngest daughter tried it.Enjoying an MSE OS life0

It makes a great salad dressing, either as it is or thinned down with a bit of olive oil. Also great stirred into a tomato and onion sauce....I just can't get enough of the stuff!0
