That is right, you can "ice" the cross on. It is not traditional "icing" but more of a paste that you pipe on. I am sure I have the recipe and when I get time I will try to find it (along with the other recipes I have promised but not had a chance to dig out and type up).

Unfortunately, yes. In the US Hot Cross buns do have the cross made of icing. In fact, I've never seen the pastry kind over here. No you can't toast them (well I suppose you could if you like flames and burnt sugar in the toaster).

I dug the delia recipe out - does anyone know what type of flour Carrs Special CC is? Is it the equivalent of strong white?

Looks like it - their website has it under white flours and describes it thus "Arguably the best breadmaking flour with excellent tolerance and superb colour."
Being a Kenwood girl rather than having a breadmaker, I have always used Delia's recipe from her Complete Cookery Course book.0 -

This has spurred me on to revealing a secret of mine and it's a damn good tip, too.
Not hot cross bun related though. Sorry!
I get ordinary current buns and wet the top with water.
Now my sugar pot is just a little smaller than the bun so I invert the bun on top of the sugar tub (Lid removed, Wally!!)and shake the tub a couple of times.

How strange - I nearly sent you a PM earlier, suggesting that you had a go at some! Now I see you are thinking about it. Scary!! The only thing is you haven't got your usual lead in time so you have about 3 days to just go for it

Pretty bloke proof, I should think, but you do need to get your head around the idea that they are not as light and squidgy as shop ones - more bread like and even better.0
