    I fry loads of mushrooms and some bacon bits, onion and garlic too if I have time. Add passata and chilli flakes. Mix with spaghetti and a bit of cheese on top. It's yum :)

    pasta with chopped tinned tomatoes, sausages (chopped) and a bit of brown sauce is lovely, cheap and quick to make (cook the sausages and the pasta, heat up the tomatoes, chop everything up, throw it all together and enjoy - kept me going as a student!)

    Hi

    My favourite simple pasta dish is to fry up some onions, mushrooms and whatever veg needs using, then at the end stir in some (low fat) cream cheese and pesto with the veg and the pasta. Then grate some parmesan over the top :D

    From the River Cafe Cookbook - garlic finely sliced fried in oil for a couple of mins, add tin toms, salt and pepper and fresh basil or dried mixed herbs. Cook it down slowly for about 30 mins then stir through pasta with a little balsamic vinegar (which can be bought v cheaply at lidl/aldi etc

    Soooooo tasty and really cheap too...freezes like a, er...dream?!

    I really like my version of cabonara - I use linguine - makes it sound posher!
    Fry some onion in a pan, when it's soft add some bacon and fry till that's done, then add the cooked linguine, take off the heat and add in a beaten egg with parmesan whisked in - the heat of the pasta will cook the egg and make a lovely sauce.
    Serve with parsley on top.

    Gently fry some chopped onions, mushrooms and bacon in a little oil, add seasoning and stir into hot pasta. Mix through a large dollop of Philadelphia-type cheese and heat until it melts through. Lush!

    This is one of my favourites. While the pasta is cooking, lightly fry some garlic and chopped chilli in some good olive oil.

    Drain the pasta, reserving a couple of tablespoons of the cooking water. Mix the cooked pasta with the garlic, oil and chilli, a big handful of chopped basil and parsley and a handful of grated cheese, preferably parmesan. Moisten with cooking water and season. Eat!

    Another version of this is to lightly steam some broccoli and then toss it in the pan with the garlic and chopped chilli. Yum.

    I also find that you can't go wrong with garlic (lots), olive oil and chopped tomatoes liberally seasoned with black pepper as a nice topping for spaghetti or linguine. But then, I absolutely LOVE garlic so that might be why.

    my fave pasta dish is

    fry off some red onion / garlic / cubed pancetta / fresh spinach / mushrooms in a pan,then stir through some low fat cream cheese and creme fraiche to make a sauce,add tagliatelle or spaghetti and finish with some parmesan shavings

    i like it with green pesto added with the creme fraiche too :)

    the spinach / pancetta etc base is a fave in our house and i use it as a filling for quiche or a suet roll too :)

    We make what we call "Paupers Caserole"

    Boil pasta, I like the twists
    fry off some onions
    peppers
    (any other spare veg starting to wilt or that you particularly like)
    some frankfurters or tinned ham

    throw all into the pasta along with:
    olives
    chopped boiled eggs
    herbs from the garden - basil parsley - whatever is to hand

    Mix with pesto - preferably red.
