Hi there,
Has anyone got any interesting ideas for pasta? I've gotten sick of just pasta and a tin of campbells soup!!! I was thinking about a one pot meal with pasta and meat - has anyone got any recipes?
Plus I was able to get a nice piece of aberdeen angus brisket reduced in Tescos very cheaply which is now languishing in the freezer as I dont know how to cook it!!!!!!!!!

Brisket needs slow moist cooking so pot roast is the way to go. brown it all over and put in a deep casserole on top of a bed of carrots, swede, celery. onions mushrooms etc. Add enough stock to come half way up and chuck it in the oven on lowish for about 3 hours.
When cooked, strain the liquid, put in a saucepan and boil untill reduced. Add a roue of butter and flour to thicken and serve with meat and veggies.
As for the pasta, how about a cheap bacon and leak dish? Any pasta - I use macaroni. A couple of leeks and some slices of bacon chopped. Cook the bacon and leeks together. Cook the pasta untill just done. make a cheese sauce. Mix the whole lot together tip into a ovenproof dish, top with breadcrumbs and parmasan and bake in a hot oven till bubbly and golden brown on top0 -
Pasta, creme fraiche, pan fried mushrooms (or italian anti pasta wild mushrooms from a jar), parsley
Pasta, artichoke hearts (good ones in oil from a jar), fried bacon, creme fraiche - can also add a bit of Dijon or English mustard if you like
Pasta, diced goats cheese, stoned black olives, sliced sun dried tomatoes.
You can add almost anything to pasta really - I just chuck stuff in and see what it's like - the above are 3 of my favourite 'concoctions'.And all of them are very quick and easy 15 minutes from start to finish suppers.

One of our family favourites is this recipe for minestrone soup.
I add extra pasta (fusilli, the twisty one, rather than macaroni) and replace the parmesan (apparently it smells,) with grated cheddar.
If you serve it with home made crusty bread it makes a really filling main meal.

When I'm feeling really lazy I cook and drain pasta and then stir in a couple of spoonfuls of flavoured soft cheese (garlic and herb is my favourite). I add some chopped ham if I have any around and sometimes some peas (frozen, I add them to the last few minutes of the pasta before I drain it).0

My sons favourite meal is pasta, add sweetcorn and peas. Crack an egg into the cooked (strained) pasta mix and stir until all covered. I also add a couple of tablespoons of cream and sometimes cooked bacon or chicken!!!!0

I do something similar to this but add frozen peas during the last 5 minutes of boiling the pasta, drain. Put a little butter or frylight in the bottom of the pan, return pasta to the pan and add the smoked salmon trimings. Stir round until the salmon is cooked (often don't need the pan on the heat for this) and then add some single cream (or elmlea mixed with yogurt to be healthy), you don't need very much, mix it all around and add parmesan and black pepper. One pot, 15 minutes!0 -
Why don't you try making a tomato, pepper and onion sauce for the pasta and put some swordfish in pancetta on top. It's a quick and easy to do.
You can use any fish really but I like it with swordfish best. Please Thank Me

We often have:
- Penne with tomato and sausage sauce (basically make a tomato sauce with sliced sausages, mix some cream and parmesan in)
- Pasta with spinach, ricotta and pine nuts
- Pasta with spinach and mushrooms
- Pasta with 3 tomato sauce (tinned, chopped sundried, and halved cherry) and feta
- Pasta bake with leeks, mushrooms and chopped bacon
- Pasta bake with salsa aurora (basically tomato sauce with cream), with some chopped mozzarella cheese
- Pasta with creamy mushroom sauce (fry up some mushrooms, mix creme fraiche in)
- Pasta with chopped peppers (fried till soft) and bacon and onion
- Pasta carbonara (I usually add mushrooms as well)
- Pasta with broccoli and pine nuts.0
