hi all, got to cook dinner today leg of lamb and not sure how to cook it without it going tough at the end or inder cooking it. all the recipes seem to be in pounds and not kgs, also cooking it at two temperatures.0

Usually, you'd put it in a fairly hot oven (200C/400F/Gas Mark 6) for about 20 mins and then turn it down to warm (170C/325F/Gas Mark 3) fro the ret of the cooking-time.
What does that piece of meat weigh? The usual way to calc cooking-time for lamb is to allow 15 mins per lb and another 15 mins on top.
The trick to ensure meat doesn't come out tough is to let it rest for at least 20 mins after you take it out of the oven before carving.0 -
Well it's easy to convert Lbs to Kg.
There are 2.2 Lb in a Kg, and when you cook a roast it's usual to turn the temp down a bit later on so it stays juicy and doesn't overcook on the outside.

Feeling a bit smug as I got a whole leg of lamb today in C*op for £5.95 down from £13.45. Trouble is I've never cooked one before. I have this vague idea that I want to cook it long and slow? thats because im going nowhere in this weather.
Would apprecitate some ideas.....:)0 -
I put lamb covered in a preheated oven 200C for 30 minutes then turn the oven right down to 150C for at least two, three hours or even four hours, depending on the size of the joint. Alternatively brown all over in a frying pand and put it in a slow cooker for 6 hours.Blessed are the cracked for they are the ones that let in the light

Stud the outside with rosemary and garlic, cover with foil and put in the oven on about 150c for about 3-4 hours. Remove foil then turn heat up to 200c for about 30mins.0

thanks, im deffo going to put the garlic and rosemary in it and by the sounds of it up high for a bit then reduce the heat. I hadn't even thought about leftovers but one things for sure it will be a very lambie weekend:D0

Garlic and rosemary as above. Bottle of red. COver with foil. Low oven for about 8 hours.
