I have just bought a whole leg of lamb, half price :-)
Only problem is, there are just two of us and I know if I cook the whole thing we will be greedy and eat it in two days!
As it is vacuum packed, would it be OK to open it, take the bone out, then cook half and freeze half? Or any other suggestions?

I don't see a problem with that.
If you freeze the fillet end you could take the bone out and slice into leg steaks and freeze.

No problem with that I did this last year when there was an offer on £4 a kg, as there is only me. I sliced it into steaks and also cubed some to use in curry. Hoping to see it on offer in the spring again, its currently 7.50 a kg and I refuse to pay that.Slimming World at target0

You could cook it all then slice and freeze in gravy for easy roasts every sunday for a few weeks0

Funnily enough we've had leg of lamb today, l usually cook it all then slice, dice and mince for roasts, curry and shepherds pie.
You could also boil the bone up for stock afterwards
