toast wiv toppings. there as easy as the easiest thing in the world.
cutt a couple of slices of bread in to circle (ish) shapes then buy some cheese,jam ect and put into lil' pots so u can just spoon the toppings onto your toast

another dish that takes me back to the 70's.My mum used to do grilled grapefruit.
Slice in half across rather than down IYKWIM, cut through all the segments but leave inthe skin, pour over a little sweet sherry or orange juice if for the kids/tee-totallers, sprinkle with brown sugar and grill until warmed through.
(I have to admit I bought a grapefruit last week just to do thisHaven't any sherry so haven't done it yet, however....)

Not sure how many you are catering for, and whether it's a Mothers Day celebration, but if you have a fairly substantial main course and pud, then I'd just buy a bag of frozen crispy coated garlic mushrooms, and serve them with a mayonnaise dip, garnished with a miniature salad (bit of shredded lettuce, 4 cherry tomatoes & 3 cucumber slices) , and some brown bread & butter.
I always go for the easy option.

A quick and simple starter that never fails to please is good old smoked salmon. Try and splash out and get some good salmon. The supermarkets probably have it on offer this weekend to cash in Mothers' Day lunches!Warning ..... I'm a peri-menopausal axe-wielding maniac0

If we are being fancy at home and having a 3 course meal. I make tuna pate.
Just butter/Marg and a tin of tuna mixed together. I add pepper and herbs and pop it in ramkins and chill.
I then toast some bread and cut in to triangles. And then put the ramkin in the centre of a plate and arrange the toast around it.
One easy and tasty starter if you like tuna. But you can do the same with salmon. Also great for making things like eggs and corn beef go further in sandwiches. Of course you don't butter the bread.

one i love making as it's sooo easy are pesto and tomato tarts.
buy ready made puff pastry. cut into squares, then score a small border [like a picture frame]. spread a little pesto between the lines. add slices of cherry tomatoes, and a little drizzle of olive oil.
put in oven - on baking tray and teflon sheet- don't ask me for how long or what temp - few mins, until the pastry border rises and starts to go crispy. serve with a little lettuce, or just a bit of balsamic vinegar.
this is not my recipe - saw it on daytime telly [i was ill] prog 5 years ago atleast, but still remember it. i make smaller ones for canapes too.

Stuffed mushrooms again but this time with boursin loverly. Or stuffed with pate, coat with breadcrumbs and shallow fry, serve with garlic mayo or do as Tasmin Day Lewis - cut up loads of vegies - yellow/green peppers cuc carrots and serve with any homemade dips for a less formal starter which can be eaten in the living room/kitchen before sitting down at the table.
I love starters - would rather have 2 starters than a main course.
Or just thought egg mayo, (half egg with creamy mayo and prapika spinkled over).0
